I just made this since I found the Xanthan Gum today. It made over 8 cups!!! Next time I'm going to try adding some cloves and ginger. It's different...but good, and filling. I'm also looking forward to eating it frozen. Thanks again!

I had a pumpkin fluff recipe that was just pureed pumpkin, greek yoghurt and spices.
Low carb, low cal and low sugar.
I always love to look at new ideas - thanks!

YUM!! Only problem is we have to cook and puree the pumpkin first because we don't get canned pumpkin in Australia (or Jello pudding powder or Fibre One bars...)

I want to make this, it sounds brilliant. What is xantham gum though? is that gelatine? and vanilla whey? that looks like a body building product.... i'd have to go to a body building shop to get that I think!

You can play with the basic recipe. The basic recipe is as follows.

    Ingredients:
2 scoops of Casein protein powder
    2/3 cup of egg whites
~200 grams (or to taste) of fruit

As mentioned, casein powder works best, or at least most consistently.

For example, I made some blackberries, with no ingredients other than the above. That list of ingredients yielded that big bowl of fluff -- the bowl is about 4.5" high and 6" in diameter!

I made my own pumpkin puree when the pumpkins were out and selling for almost nothing around Halloween now I'll have a use for it. sounds good. But I think i'd add a little cream of tartar to get a nice fluff
