    in response to "meatloaf sticking to bottom" question - I've never had it to stick... even when using venison, there is enough liquid from the ingrediants... onions, peppers, etc.
    If I was using ground turkey, I might spray the bottom of crock with non-stick spray.

    Taco Soup in the slow cooker (AKA: Crockpot)
    you can make it vegetarian - just omit the meat, I've made it both ways.

    Brown 1 pound of ground turkey, drain off fat, dump into slow cooker.
    Add:
    1 can of corn (drained)
    1 can of Creamed Corn
    1 can of Rotel
    1 can of stewed tomatoes
    2 cans of beans (your choice- sometimes I do red kidney chili beans, sometimes white beans, sometimes I get the S & W beans with chipotle seasoning on them)
    1 packet of Taco Seasoning
    2 soup cans (from the corn or beans) of water

    Mix well, and cook on low all day - your kitchen will smell AWESOME!!!
    I serve with sour cream, Juanita's chips, shredded cheese, and taco toppings (fresh tomatoes, onions, etc).


    Hubs loves this soup, and when coming home for dinner can smell it outside and is excited for dinner.

    Crock Pot Chicken W/ Black Beans and Cream Cheese

    Total Time: 4 hrs 3 mins
    Servings: 4

    4 -5 boneless chicken breasts
    1 (15 1/2 ounce) can black beans
    1 (15 ounce) can corn
    1 (15 ounce) jar salsa, any kind
    1 (8 ounce) package cream cheese

    Directions:

    1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
    2. Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
    3. Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
    4. Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
    5. All done and enjoy!

    I do this a lot but use Rotel instead of salsa. You can add ranch dressing mix and taco seasoning... Also, if you want to cut calories, I use 2 oz. of cream cheese instead of the whole thing, and then top the bowl with some greek yogurt.

    Barbecue Pork Ribs or Chicken

    2 -3 lbs boneless pork ribs or 2 -3 lbs boneless chicken
    salt and pepper
    1 sweet onion, chopped
    4 -5 minced garlic cloves
    3/4 cup pineapple juice
    1/3 cup grape jam
    2/3 cup ketchup
    1 tablespoon cider vinegar
    3 tablespoons Worcestershire sauce
    3 tablespoons packed brown sugar
    3/4 teaspoon crushed rosemary
    Directions:
    1
    Spray your slow cooker with nonstick spray.

    Place the spareribs (or chicken pieces) in bottom of slow cooker. Sprinkle w/ salt and pepper; if desired to taste.

    Combine remaining ingredients in a bowl. Pour over meat.

    Cover and cook on low for 6-8 hours or until done.

    Apologies if anyone has already posted something like this, but this is my go-to crock pot recipe. I'm from New Mexico, so I know tacos! ;)

    Crock Pot Chicken Tacos
    2 - 3 chicken breasts (I also use 6 - 8 tenderloins - they shred better in my opinion . . . )
    1 packet taco seasoning
    1 cup fresh green chile (as I said, I'm from NM, so fresh is ALWAYS best)
    2 cloves garlic (or 2 tbsp minced garlic)
    1/2 c. - 1 c. water

    Combine all and cook on low for 4 - 6 hours. I usually shred the chicken with my spoon in the pot. My sister won a contest at her office with this recipe, so I guarantee it's good. :)
