Made this a week ago, it was awesome.

Yankee Pot Roast With Vegetables (In the Crock-Pot)

Prep Time: 15 mins Total Time: 10 hrs 15 mins Servings: 8
2 -3 lbs rump roast, salt and pepper 4 medium potatoes . I slice them 1/2" thick or use 2 cans Irish Potatoes drained. Quarter 2 medium onions,1 sm bag finger carrots, 4 stalks celery, sliced ( with leaves), 2 Parsnips cut in 1/2" slices, 1 Turnip halved and sliced into 1/2" slices. 1/2 C beef broth low fat.
    Directions
Place vegetables into the bottom of the crock-pot.
Season the beef generously with salt and pepper, then place in pot.
    Add the liquid.
Cover and cook on LOW heat 10 to 12 hours (or HIGH heat 5 to 6 hours).
Remove meat and vegetables with slotted spoon and thicken drippings for gravy if desired.

Blink1201, the taco stew sounds great...I will have to try it...I'm getting sick of baked or grilled chicken and want something different...this just may be it and I love simplicity with dinner! Thanks!!

Is the Hot sauce HOT? Is there something I can substitute for it if it is? I don't handle spicy very well....thanks!
    Buffalo Ranch Chicken

    1 lb Chicken breast
1/2 bottle Franks Hot Sauce (NO CALORIES)
1 package Hidden Valley Ranch (the powder)

Put the chicken in the crockpot, then Franks Sauce, and sprinkle the ranch over it....not sure how long because we all put it on for different times. Since I am gone all day I put it on low (10hours)

I have made wraps out of it and topeed salads....it is sooooooooo EASY, low cal, and healthy

I made it for my entire office one day...everyone loved it

I just made Crockpot Taco Chicken Stew. Was sooooo good.

1 can Chili beans 1 can Diced tomatoes w/ green chilis
1 can Kidney beans 1 can diced tomatoes
1 can Black Beans(rinsed) *just these* 1 8oz can tomatoe sauce
    1 can Whole Kernel Corn(drained)
    1 onion chopped
    1 pk Taco seasoning
    2-3 boneless skinless chicken breasts

Mix all together, except chicken, and place in crockpot that has been sprayed with cooking spray. (I prefer the crockpot liner. No mess). Place chicken on top. Cook on high 4-5 hrs or low 6-8. When chicken is done, remove, shred and place back in crockpot. Serve w/ shredded cheese and light sourcream

    3/4 Cup is 116 calories, 8 g protien, 18 g carbs and 1 g fat

I am not happy with HOT spicy foods either but I have used 1/2 bottles of Franks and I was good with it. If you don't want to use the hot sauce maybe a mild salsa may work. That actually sounds good...lol

    Hawaian Barbeque Chicken

3lbs chicken breasts (5-6 chicken breasts)
1 18oz bottle of Barbeque Sauce
    1 20oz can crushed pineapple
1 cup chopped onion (frozen or freshed)

Layer the ingriendients in the crockpot in this order:

    Chicken
    Diced onions
    Barbeque Sauce
    Crushed Pineapple

Cook on high for 4-5 hours or low for 6-8 hours. About an hour before serving, pull the chicken out and shred it. Then return to the sauce in the crockpot and cook until the shredded chicken has absorbed the sauce.

Note* It was also mentioned you could use thighs as well. I recommend chicken breasts though.
