Had to come back and vouch for the Cream Cheese Chicken Chili. So good! Used Neufchâtel instead of fat free, and my own dry ranch mix (I try to avoid the overly processed stuff).

It's a keeper!

I made a turkey split pea soup today that turned out really well- even the kid liked it (I told him it was veggie soup w/ turkey LOL). Only about 200 calories per serving. My husband is a vegeterian so I was reading your post. Are you using a Mock chicken broth. I just got confused because you added vegan (which was the reason I was reading) and saw chicken broth. Your suggestions sounded good I will just convert it to vegetable broth.

mediterranean chicken

6 skinned chicken thighs, bone-in
1 can plum tomatoes, drained and cut into chunks
1 3/4 cups coarsely chopped onion
1/4 cup pitted kalamata olives, chopped
2 tablespoons drained capers
1/4 tsp. freshly ground black pepper
1 tablespoon olive oil
1 small lemon

grate rind and squeeze juice from lemon to equal 1 tsp. rind and 1 tablespoon juice. reserve rind and refrigerate.

combine other ingredients except chicken.
spray crockpot with nonstick cooking spray.
place half the mixture in the crockpot, place the chicken on top, cover the chicken with the remaining mixture.

cook on LOW for 4 hours.

garnish with lemon rind.

I've become a fan of doing turkey in the crock pot.

1 3-lb turkey breast roast (thawed)
1 lb baby carrots
1 1/2 lbs fingerling potatoes, cubed
1/2 medium onion, roughly chopped
1/2 tbsp minced garlic
1 cup water
1/2 cube chicken bouillon (optional)

Put veggies in the bottom of the crock pot. Put the turkey on top of the veggies, add the water and boullion, cook on low for 6-7 hours (or until internal temperature on the turkey is 165).

I don't like doing a lot of prep work, so for me, anything that is "throw it in the crock pot and go" is a good meal, especially if there are only like 5 ingredients.

These sound great.

Black Beans
1 onion, chopped
2 -3 cloves of garlic, chopped
1 poblano pepper, chopped
1 jalapeno pepper, chopped
(additonal dried peppers chopped if you like)
1 bag of dried black beans, rinsed
3 -4 chipotle peppers in adobo sauce, chopped (or use the entire can like i do)

Throw all ingredients in the slow cooker, cover with water or low sodium chicken broth.

Cook on low for 8-12 hours (overnight works for me)

I will en blend up half the bean mixture, add more chikcen stock or water and you have a really rich and flavorful black bean soup.
