    I often cook a whole chicken seasoned with salt pepper and paprika. Then I use the meat in other recipes or salads. Very simple, falling off the bone moist! :bigsmile:

    I made a turkey split pea soup today that turned out really well- even the kid liked it (I told him it was veggie soup w/ turkey LOL). Only about 200 calories per serving.   • I love Chili- WHITE BEAN CHICKEN CHILI YUM! Crockpot style :) Try this, so good! And healthy! EASY!!!
    Ingredients:

    Servings:

    8

    Units: US | Metric

    1 1/4 lbs boneless skinless chicken
    2 (15 ounce) cans great northern beans or 2 (15 ounce) cans navy beans
    1 (15 ounce) can hominy or 1 (15 ounce) can white corn
    1 (1 1/4 ounce) envelope taco seasoning
    1 (4 1/2 ounce) can of chopped green chilies
    1 (10 3/4 ounce) can condensed cream of chicken soup
    1 (14 ounce) can chicken broth
    1/2 cup sour cream
    chopped green onion (optional)
    monterey jack cheese (optional)

    Directions:

    1
    Place chicken in a 4 quart slow cooker.

    Top with beans and corn.
    3
    In a medium bowl, combine taco seasoning, chiles, condensed soup, and chicken broth. Pour over top of ingredients in the crock pot.

    Cover and cook on low for 8 to 10 hours.

    Before serving, stir gently to break up chicken, then stir in the sour cream.

    Serve topped with green onions and jack cheese, if desired.

    I make a super healthy vegan soup with chicken broth, beans (anyn kind will work, I used canned navy beans, rinsed and drained last time, but black beans or red beans work great), almost any kind of diced up veggie is great in there (I last used zucchini, green beans, onions, tomato, and red bell pepper). To add something to it I will toss in diced up tofu, brown rice, white rice, orzo, quinoa... whatever you're feeling. It's SO good for you. Any kind of seasoning works--I've done a curry flavored version, sometimes I'll use a more mexican mix of spices, usually use garlic.

    Um, you know that vegan means "no meat or animal product" of any kind right? That means you shouldn't be using chicken broth for your soups...or anything. Not trying to be mean and it sounds delicious BUT if you;re trying to be a serious vegan you need ix-nay the chicken broth!

    I do this very simple chunky soup in mine. There is a lot of it, no fat and not a lot of calories.

    1/2 bag frozen vegetables (usually the ones with carrots,couliflower,beans,etc) Any will do really, depends on what you like
    1 can baked beans
    2 sliced carrots
    1 large onion, diced
    2 garlic cloves
    Handful of red lentils( i don't usually soak them before, just wash them)
    1 potato (optional, you can add any veg you like really)
    1 piece of chicken breat, cut in small pieces, I don't use much of it, and sometimes i don't use any at all and make it completely vegetarian.
    1 tsp dried oregano
    1tsp dried parsley

    I put this all together and cook in High setting for 5 hours or low setting for 6.5 hours.
