Chicken enchiladas with cilantro-lime cauliflower 'rice'!
And some experimental sushi with the cauliflower rice, it was pretty dang tasty and only about 25cal per roll!

Bump with pics. Oven-baked jerk chicken, rice with peas, and salad:

Following is NOT low-cal now low-fat. First baked some yogurt biscuits (use fat-free plain Greek yogurt but there's plenty of butter in it):
Which was then used for a Southern breakfast for dinner. Biscuits with pork gravy, two eggs over easy, salt pork, and cheese grits:

I usually eat off paper plates but since I was photographing this for you all, I put it on a plate and even took it out on the porch to get natural light in the picture.
This was my lunch today: a hamburger patty (4 oz. raw), 1/2 cup whole kernal sweet corn, and a cup of spinach salad (1 cup spinach, 5 manzanilla olives, 1 tbsp olive oil).

Cucumber, cream cheese, and salmon sushi.
Baked thinly sliced potato crisps.
Gluten free pizza crust, with garden picked herbs and veggies.
Apple crisp, made with fresh green apples, Grade B maple syrup, Oatmeal, and Almonds.
Gluten free bread, was actually pretty delicious!
I need to cook more most of these are from months ago! I miss making pretty healthy food. That changes tonight! You guys have inspired me to cook more awesome meals. =D (P.S I hope these show up...)0 -
