Another great site is http://onceamonthmom.com/ Lots of great freezer recipes for the crock pot as well as for the stove top and oven. One of the contributors has also adopted a Paleo lifestyle so some yummy Paleo recipes for the freezer too. Some of the bells and whistles of the site you need to subscribe for but you can get the basic recipes and freezer instructions.0

I've been doing this and have run across a few sets of recipes. This set is my favorite:

Except for the maple dijon chicken, it's really salty. Made the BBQ spareribs last night and they were great. Chicken alfredo and taco soup are also awesome.
Other sets have been way more complicated and way less flavorful.0 -

***Oops! Well I'll go ahead and leave this recipe up, even though now it appears it's not a Crockpot Recipe. It's listed under that in her website.. oh well.. still a recipe you can make easily and then freeze.***
Chicken and Rice Soup
Ingredients:
2 Tablespoons olive oil
1.25 cups onion, chopped
1 Tablespoon minced garlic
2 cups celery, chopped
1.5 cups carrots, chopped
0.5 pound chicken, cooked and chopped
7 cups reduced sodium chicken broth
2 cups rice, cooked
1 Tablespoon whole grain Dijon mustard
0.5 teaspoon salt
0.25 teaspoon pepper
Directions:
Heat oil in large skillet. Saute onions and garlic. Add celery and carrots and cook until tender. Add remaining ingredients and let simmer over low heat.
Freezing Directions:
Once cool, place in freezer bag. Remove as much air as possible, label, and seal. To serve: Thaw. Heat through.
Servings: 8

yes! I just bought a mini crockpot for lunches. guess who's making mini meals!
I do the same thing...dump leftovers into my mini-crockpot and take lunch to work...two hours later....leftovers make cool meals.
