Chicken enchiladas with cilantro-lime cauliflower 'rice'!
And some experimental sushi with the cauliflower rice, it was pretty dang tasty and only about 25cal per roll!
I've had chicken "fried" cauliflower rice, but these two ideas sound friggin awesome! Im gonna have to try it!0 -

I love this thread, it's so inspiring to see the meals of people who are trying to eat healthier. But It's a huge pain to look through this forum. I thought it would be a good idea to have a place where we could post pictures and they could be organized well, so I'm working on a website to do that.

favorite dinner of roasted chicken (light and dark meat), sauteed potatoes with kale, and a simple salad of romaine tomato and reduced fat ranch, came out to approx 500 cals.
favoorite weekend breakfast of scrambled eggs with spinach and tomatoes, def top with chulola before eating!

I've been traveling for 5 days in Puerto Rico and eaten some mad good food and tasty brews. But mostly forgot to take pics of the best of it. Such a shame because hot damn their food was good (and it's all gone straight to my @ss)
Chicken Burrito filled with beans, guac, veggies and a side of chips/pico
Tacos three ways (pork, beef and chicken) with pico and chips (yeaaaa totally my fave - guilty as charged!) + loads of sangria

Sauce and marinade was soy, sherry vinegar, garlic, thai bird chiles and a little corn starch. heat oil in wok, add a little garlic and chile, saute snow peas, then add shrimp, cook till just cooked through and add noodles and sauce and cook for a min or two till everything is cooked through and well combined0 -
