    This is my favorite...

    Feta Cheese
    Mandarin Oranges
    A couple walnuts sliced thin
    1 teaspoon dried cranraisins
    shredded radishes
    chick peas
    thinly sliced mushrooms

    1/3 cup fat free cottage dress instead of any type of dressing....:)

    I love the idea of using cottage cheese instead of dressing! Added protein, as well! Great tip! :)

    I love different salads. 2 super easy favourites are:

    Baby spinach, beetroot, feta cheese and pine nuts with caramelised balsamic.

    Or

    Rocket, cooked crispy bacon, sliced pear and shaved Parmesan with a dressing of mayo mixed with balsamic vinegar.

    OMG... I'm going to have to go and make a salad now!!

    Oh and a good one for the winter months is roast pumpkin on baby spinach with feta and walnuts.

    meal salad.... baby spinach, feta chese, walnuts, cranberries and a rasberry vinagarette add chicken but not necessary

    I like romaine w/arugala with goddess dressing, almond slivers, warm edamame beans, sweet salad tomatoes halved and sometimes I throw in chia seeds.

    I like to keep it simple and typically stick to 4 ingredients or fewer. :)

    *Greens, grapes, sunflower seeds, vinegar, sometimes a little olive oil

    *Spinach or arugula, strawberries, balsamic vinegar, sometimes some goat cheese

    *quinoa, strawberries, plain yogurt, basil

    *Pasta (curly or other interesting shapes, preferably a mix of colors), artichoke hearts, pickled beets, olives

    *Bow-tie pasta, lemon juice, basil

    *Couscous, fresh fig, melon, arugula

    *Any fresh fruit, any greens, any seeds, with vinegar and olive oil to taste

    This probably sounds really weird, but tuna, gorgonzola, cranberries, shaved almonds, tarragon, and balsamic (plus salt/pepper, obv). I eat this one on its own without lettuce.

    Grilled chicken (a chicken strip if you can sneak it into your calories or jerk chicken is super good too), black beans, corn, tomato, queso fresco, cilantro, juice of half a lime, 1/2tbsp olive oil, and some smoked paprika.

    Sunflower seeds or pumpkin seeds, goat cheese, blackberries or raspberries, and avocado. Basic balsamic vinaigrette.

    Shredded carrot, radish, cucumber, gorgonzola with a creamy avocado dressing (which is just 1/3c white or apple cider vinegar, 2 ripe avocados, juice of half a lemon, salt/pepper - blitz in a food processor until smooth).
  • I really like the Salad Creations by Lean Cuisine. They are in the frozen section of the grocery store. They are delicious and healthy! All you need to do is supply the lettuce.

    Lettuce, cucumber, tomatoes, sweet peppers, olives, sin dried tomatoes, houmous and oil and balsamic dressing with herbs in. Lovely with any meat or falafel! X

    fresh, mild, iceburg lettuce (or romaine lettuce), BACON, diced hard boiled eggs, grated parmesan cheese, cubed cheddar cheese (I prefer sharp) shredded purple cabbage, broccoli (cut up in small pieces-head pieces), mushrooms (I really prefer mine sauteed in butter...) green bell pepper (sliced in thin rounds),sliced cucumbers, sliced green olives, grape tomatoes, cottage cheese (on the side-slightly sprinkled with salt..), (onions-cooked translucent-sometimes..), diced up chicken (or steak) and caesar salad dressing (or blue cheese dressing)...give or take a few ingredients lol YUM!!!!! :D

    Baby spinach, red pepper/capsicum, olives, pickled onions, red onion, fetta, sweet corn kernels, grape tomatoes, butter beans and sundried tomato strips all mixed up together with a tiny bit of the oil from the sundried tomatoes.
  • My absolute favourite salad is:

    Lettuce/mixed leaves
    Cucumber
    Spring onions
    Red/Yellow pepper
    Chopped orange segments
    A couple of sliced black grapes
    Finely chopped red chilli
    Small handful of dried cranberries
    A few chopped walnuts
    And a crumble of blue cheese if you can spare the cals!

    Serve with chicken, preferably breast and grilled and some low cal honey and mustard dressing

    My friend adapted this from a salad she'd had at the Hard Rock Cafe. I've eaten it there but I genuinely thought hers was better!!

    Vietnamese chicken salad:
    cucumber, tomato, onion (or green onion), feta w/vinegar or vinaigrette (no specific recipe)
    chopped salads-chopped tomatoes, onions, peppers, celery, eggs, blue cheese w/vinaigrette
    black bean, red peppers, corn and couscous salad w/olive oil vinaigrette
    quinoa and mango salad w/black beans
    balela (black bean salad)
    rice and apple salad
    carrot salad

    Some specific recipes below:

    Vietnamese Chicken Salad
    Ingredients:
    8 oz. finely shredded cabbage
    1 medium/lg carrot shredded
    1/2 english cucumber in matchsticks or diced
    you can also add red or yellow pepper cut into matchsticks
    8 oz. shredded chicken
    mint, basil and cilantro to taste
    a sprinkling of chopped dry roasted peanuts is good over the top

    Dressing: mix and let sit while making the salad
    1 serrano (or other) chile , seeded and minced
    1 large garlic clove, peeled, minced
    1 tablespoon sugar
    1 1/2 teaspoons rice vinegar
    1 1/2 tablespoons lime juice
    1 1/2 tablespoons fish sauce
    1 1/2 tablespoons vegetable oil


    Curried Quinoa Salad with Black Beans and Mango
    Ingredients:
    1 cup quinoa
    1-2 ripe mangoes, peeled and chopped
    1/2 red or yellow pepper, chopped
    1/4 (or more) English cucumber, chopped
    2-3 green onions or a chunk of purple onion, chopped
    2 cups (packed) baby spinach, torn or sliced (optional)
    1 can black beans, rinsed and drained
    cilantro to taste

    Dressing:
    1/4 cup canola oil
    2-4 Tbsp. white wine or white balsamic vinegar
    1 Tbsp. mango chutney, chopped if chunky (optional)
    1 tsp. honey
    1 tsp. curry powder or mild paste
    1/4 tsp. cumin


    Balela:
    Ingredients:
    2 15 oz cans garbanzo beans, drained and rinsed
    1 15 oz can black beans, drained and rinsed
    1/2 cup minced fresh mint
    1/2 cup minced fresh parsley
    1/2 and onion, chopped
    1 pint grape tomatoes cut in half or if you have really good tomatoes then seed and cut up 2 tomatoes

    Dressing:
    1+ jalapeno, finely chopped
    1 clove garlic, finely chopped
    1/4 c olive oil
    juice of 1 lemon and apple cider vinegar to equal 1/2 cup
    Salt and Pepper to taste

    Rice Salad:
    Ingredients:
    3 cups cooked brown rice
    2 cups cubed grilled chicken breasts (optional) I add a can of black beans instead
    2 medium apples, chopped
    1 medium sweet red pepper, chopped
    2 celery ribs, finely chopped
    2/3 cup chopped green onions
    1/2 cup chopped pecans, toasted
    3 tablespoons minced fresh parsley + cilantro
    optional: garnish with cubed avocado and more cilantro

    Dressing:
    1/4 cup cider vinegar
    3 tablespoons canola oil
    1 tablespoon lemon juice
    1 teaspoon salt
    1/4 teaspoon pepper

    Carrot Salad:
    Ingredients:
    1/2 pound carrots, peeled and shredded
    1/4 teaspoon salt
    1/8 teaspoon(pinch) ground black pepper
    1 tablespoon chopped fresh parsley (optional)

    Dressing:
    1 tablespoon lemon juice
    1/2 teaspoon Dijon mustard
    3 tablespoons olive oil

    Spring mix,chick peas, olives, feta,onion, cucumber,tomato,avocado, olive oil and red wine vinegar. Sometimes I add chicken or turkey.

    At the moment I'm simplifying my lunches (typically when I have salad) so I just like to use a heap of spinach, a tin of flavoured tuna; the ones 100 calories and less and 25 grams of light shredded cheese.
    I also like spinach + capsicum + cherry tomato + corn + italian dressing, 100% fat free.

    Perfect! A student left me a bottle of pickled beets (it's a long story), and I've never tried them before, so I didn't know what to do with them. Do you just use the juices from the artichoke hearts (I'm assuming they're canned?) and beets as a dressing for the pasta?

    I love all these other salad ideas too. I could probably try a different salad every day for a month from this topic alone!

    Here are mine:
    greens (spinach, lettuce, etc.)
    orange, sliced and broken into pieces
    sliced almonds
    Whisk together equal parts vinegar, honey, dijon mustard, and olive oil, and toss over salad ingredients.

    avocado, tomato, greens (lettuce, spinach, etc.), equal parts mayo (or plain yogurt) and mustard, shredded chicken (optional)
    Toss all ingredients until coated.

    pistachios, parmesan cheese, pepper, greens
    Toss to combine. I like this one, but I wouldn't bring it to a potluck.

    feta, balsamic vinegar, spinach
    Toss to combine.

    Thanks so much for all of the great salad combos that you all suggested it gave me a ton of ideas to try. My usual go to is:

    Spinach
    cucumber
    cranberries
    sunflower seeds or pumpkin seeds
    red bell pepper
    onion

    then I top it with a teaspoon of Kens light honey dijon and a pan fried egg(cooked in Pam) If I am not doing the egg I will use Duck Trap(I think) smoked salmon as my protein and add some avodado as well.

    The yolk from the egg with the dressing makes it very creamy and delicious.
