    This thread is awesome! I don't have a picture, but I make a Mexican pepper casserole that my carnivorous boyfriend loves. It is from a Moosewood cook book. And it only has a few ingredients :)

    4 Large any color peppers
    1 medium onion
    2 cloves garlic
    2 cups sour cream or yogurt
    2-3 eggs

    Slice the peppers, onions and garlic. Saute over medium heat until soft. Add to bottom of 9x13 pan. You can use a smaller one if you would like a thick casserole.
    Beat the eggs into the sour cream. I like to use low fat yogurt once and a while.
    Pour sour cream mixture over peppers.
    Place in oven at 400 for about 40 minutes.

    You can add in other spices like cayenne, thyme, mustard, or even some chicken if you want. Feel free to experiment!

    I didn't really follow a "recipe", I mostly just threw together things that sounded delicious! It went something like this:

    - Boil 2 cups of water (enough to fill your soup bowl) and dissolve 1-2 teaspoons of vegetarian boullion.
    - Add 2 ounces of buckwheat soba noodles, 1/2 cup frozen edamame, 1/2 a medium onion, a tablespoon of soy sauce, a sprinkling of rice vinegar, garlic and sliced fresh ginger. Cook until noodles are pretty soft.
    - Add shredded napa cabbage (as much or as little as you like...I happen to love cabbage, so I threw a ton in there!). Cook until cabbage is wilted.
    - Reduce soup to a simmer and add 1-2 tablespoons of mellow white miso (careful, boiling it will alter the flavor). Stir to dissolve and serve!

    Delicious lunch today - a completely vegan chaat, a Pakistani street food chock full of chickpeas, boiled potatoes, fruits, crunchy bits and lots of different chutneys and spices. So delicious, I am definitely hooked!

    I'm not sure where you'd purchase seitan in the UK, but I live in the US and don't purchase it, I prefer to make it at home because it's easy, cheap and I control what goes into it.

    I buy Vital Wheat Gluten flour from amazon.com and mix 2 cups of the gluten with two cups of water, some garlic and onion powder and dried thyme. I simmer (AND I MEAN SIMMER) it for about an hour in 6 cups of vegetable stock and soy sauce, then slice and freeze.
