Peanut Butter Banana Oat Muffins (with no flour)

Wanted to share a good recipe I tried out last night for Peanut Butter Banana Oat Muffins, they turned out really well! My friend shared a version of this with me and I tweaked based on my taste.

Ingredients:
1 ¼ cup old-fashioned rolled oats
1/2 tsp. baking powder
3/4 tsp. ground cinnamon

1/4 cup softened peanut butter
1 cup milk
1/4 cup egg whites
1 mashed banana
1 tsp. vanilla extract

Directions:
• Preheat the oven to 375F.
• Lightly grease a muffin tin (makes 6 large or 12 small)
• In a medium bowl, mix all dry ingredients
• In another bowl mix all liquid ingredients.
• Add liquid mixture to dry ingredients and stir
• Divide mixture evenly in muffin pan
• Bake for 22-25 minutes, until the top is browned and the oats have set.
• Let cool before serving.

Nutrition (per muffin based on 6 large muffins):
Calories - 166
Carbs - 21g
Fat - 7g
Protein - 7g

    To get the calories down a bit more, I am going to try these with PB2.

    I used skim milk, and I just bought some PB2 so am going to use that when I make my next batch this weekend!

    The verdict! Excellent!
    Tried these tonight- a couple of notes:
    1. Used a whole egg - I am pro chicken-fruit!
    2. Added chocolate chips so the kids would eat them
    3. When I mixed it all up it was really liquidey and I thought there was no way it would set so I added 3/4 c oats ( for total of two cups) and they cooked up perfectly!
    4. I thought for sure I was going to regret not adding stevia, but with the chic chips and banana they are perfectly sweet enough!

    With the extra additions I am thinking 125 cals per small one, maybe double the carbs?
  • Made these last night using the PB2 in place of peanut butter and they taste just the same! I ended up adding another 1/4 cup of oats, making it 1.5 cups total and cal count came out to be 140 for 1 large one.
