    3 lbs chicken breasts
    1 bottle of Franks Red Hot. hot sauce
    1 packet of Hidden Valley Ranch dry mix

    Cook on low for 6-8 hours

    Shred the chicken, add in one tablespoon of butter and mix.

    I usually put this on a roll with homeade coleslaw. It is so easy and so good!

    add ranch dressing to that and its even better
  • Crockpot chicken tacos
    3 frozen chicken breasts
    1 can black beans drained and rinsed
    1 can rotel
    1 can corn drained
    1 package of taco seasoning
    Cook on low 8 to 10 hours (mine cooks on low for 8 and then the crockpot automatically goes to keep warm)
    Shred with fork when you get home. Serve in taco shells with your fixings or make nachos out of it (i'm guessing the nachos are far worse though with the chips)

    Crockpot BBQ Chicken Wraps
    3 frozen chicken breasts
    3/4 bottle bbq sauce (I just cover the chicken breasts fairly well)
    Diced onion (omit if you dislike)
    a little brown sugar
    Cook on low 8 hours or so.
    Shred with fork
    Serve on tortillas with a slice of cheese

    Crockpot chicken enchiladas
    3 frozen chicken breasts
    1 can enchilada sauce
    Diced onion (omit if you want)
    1 can cream of chicken soup (can be omitted so its a healthier meal)
    Cook on low 8 hours or so
    Shred with fork
    Wrap in tortillas and place in greased baking dish
    You can add jalapenos and olives inside tortillas if you like them.
    Cover with the leftover sauce from crockpot or get another can of enchilada sauce
    Bake at 350 for 20 minutes
    Sprinkle with some cheese (omit for healthier option)

    Crokcpot turkey breast
    Buy a Turkey Breast and let it thaw (make sure you take the gravy packet out!)
    1 Can cranberry jellied sauce
    1 package Lipton Onion Soup Mix
    2 tablespoons butter
    a splash of orange juice (less thank 1/4 cup)
    I know it sounds weird but it is one of the best recipes for turkey breast!

    Crockpot Chicken Enchilada chili
    Chicken breasts diced and cooked
    1 can black beans drained and rinsed
    1 can corn drained
    1 can red kidney beans
    1 can chili beans
    1 can enchilada sauce
    diced onion
    diced olives
    diced jalapenos or green chilis (depends on how spicy you like it)

    I recently cooked a whole chicken in my crock pot that came out terrific. I ate the white meat cold over salad and in sort of pasta salad if you will and my husband had the dark hot with gravy.

    You cannot eat the skin when dont this way but - should not anyway right? :)

    one good sized onion sliced - in bottom of crockpot
    cloves from 3 heads of garlic - peeled and in bottom of crockpot

    in bowl combine: two tablespoons of olive oil with 3/4 teaspoon each Parsley, Rosemary and Thyme then salt and pepper to taste

    coat the chicken under the skin and inside with the oil and spice mix

    place in your crockpot and cook on high for 5-6 hours

    This truthfully did not look all that pretty but it made my house smell so good and the meat was so moist and flavorful.

    Google, Mexican Minestrone Soup (I think its on bhg) Its SOOOO good and you can tweek it to work for you, I cant see why you cant add chicken to it? You could reduce the beans some and add chicken, plus you can add extra sour cream to your husbands bowl...

  • I have been using my crockpot so much the past few months. It's great to make a meal that will last for a couple days and save me from having to cook every night on the stove.

    are you saying an entire bottle of the hot sauce? What size? This sounds good.

    Naomibabes took the words right out of my mouth - BBQ Pulled Pork is just awesome from a slow cooker. Google Simon Rimmers Pulled Pork and Coleslaw recipe from Channel 4, it's the best one I've tried!

    You may also want to try a recipe for proper Corned Beef that my fiancee gave me (nothing like the tinned stuff full of fat we normally see in the UK!).
    Corned Beef & Cabbage Recipe
    Ingredients:
    1 medium onion, cut into wedges
    4 large red potatoes, quartered
    1 pound baby carrots (I know you hate them so if you like, leave them out)
    3 cups water
    3 garlic cloves, minced
    1 bay leaf
    2 tablespoons sugar
    2 tablespoons cider vinegar
    1/2 teaspoon pepper
    1 corned beef brisket with spice packet (2-1/2 to 3 pounds), cut in half.
    1 small head cabbage, cut into wedges
    Method:
    Place the onion, potatoes, and carrots in a 5-qt slow cooker.
    Combine the water, garlic, bay leaf, sugar, vinegar, pepper, and contents of spice packet (You can use a small pack of Pickling Spices for this); pour over vegetables.
    Top with brisket and cabbage.
    Cover and cook on low for 8-9 hours or until meat and vegetables are tender.
    Remove bay leaf before serving.
    Yield 6-8 servings.

    Yes it's 6-8 servings but you can always use a smaller cut of beef and reduce the rest of the ingredients.

    I make apricot chicken I coat the chicken breast or pieces in flour and brown in pan ( can omit browning the chicken ) put meat in slow cooker add apricot nectar and 1-2 packets of dry french onion soup and set and forget my family favourite serve with mash potato or steamed rice, you can also add sliced onion and dried apricots to the slow cooker, usually I add dried apricots about an hr before serving

    All I know is cooking dried beans is a real pain in the *kitten*, but a slow cooker would solve this.

    Good way to make a hearty bean + other ingredient dip... just add chicken and a jar of salsa and you've made something to put on some chips.

    I have a few go-to crock pot chicken recipes:
    Santa-Fe Chicken:
    Small Jar of Salsa (Your choice of flavor)
    1 Can Black Beans (Drained)
    1 Can Corn (Drained)
    Mix together, then place three chicken breasts on top of mixture
    Cook 8-10 hours on low
    Shred chicken and serve over rice or in tortillas.


    Rotisserie Chicken:
    1 whole chicken
    Pam Cooking Spray
    Seasoning salt of chicken rub (your choice of flavor - I prefer Cajun chicken rub)
    Ball up aluminum foil in the bottom of the crock pot, place whole chicken on rolled up foil. Spray whole chicken with Pam Cooking spray and sprinkle with seasoning salt or chicken rub. Cook 8-10 hours on low.
    Chicken is very moist and its cheap to make if you get the chicken on sale.

    We eat a lot of chicken as well and the kids really like these.
