  • Hi, please can you tell me what cut of meat you use in this pot roast recipe? I really like the sound of this! :-)

    If you are looking for easy, my husband's 3 favorites are: (both on low for 8 hours)

    BBQ Chicken--put in chicken thighs frozen or thawed (we usually only eat white meat, but the thighs stay juicier) and 1/2 jar of bbq sauce. It is delicious

    French Dip--bottom round roast, 2 onion packets, 2 cans reduced sodium beef broth. Shred beef and get some of the juice to dip.

    Both we usually eat, have for lunch the next day, and freeze the remainder for another week.

    The third is my absolute favorite--butterball boneless turkey breast. The slow cooker directions are right on the turkey (a little broth, and I sometimes add poultry seasoning if I have it). It is delicious, moist turkey.

    Today I made some chicken soup in my crock pot. I used:

    2 chicken breasts, chopped up
    3 gold potatoes, diced
    broccoli
    mixed vegetables (carrots, peas, green beans, corn)
    1 quart chicken stock
    salt, pepper, italian seasoning, sriracha

    I just threw the chicken, potatoes, stock, and seasonings in this morning, and about a half an hour before I served dinner I threw in the vegetables.

    I want to go to there! This sounds delicious.

    I need to try this!

    One of my favorites is Southwestern Chicken & White Bean Soup

    1 TBSP Canola oil
    1 lb Chicken breast (cut into 1-in cubes)
    1 can Chicken Broth (I use the Swanson 99% fat-free)
    1 cup Pace chunky medium salsa
    3 tsp minced garlic
    2 tsp ground cumin
    1 can drained white beans
    1 cup frozen corn
    1 med. onion (chopped, about 1 cup)

    Lightly brown the chicken in a pan with oil, then add to crock pot with all other ingredients. Cook on high about 4 hours or low for 6-8 hours. Makes 4 large servings or 6 smaller servings. If measured out in 4 servings, comes out to around 305 cal., 35g carb., 6g fat, 34g protein per serving.

    And if you like more veggies, sometimes I will add some sliced carrots to this.

    Crock Pot Chicken Taco Chili
    Gina's Weight Watcher Recipes
    Servings: 10 • Size: 1 1/4 cups • Old Points: 3 pts • Points+: 5 pts
    Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g • Protein: 16.9 g

    Ingredients:

    1 onion, chopped
    1 16-oz can black beans
    1 16-oz can kidney beans
    1 8-oz can tomato sauce
    10 oz package frozen corn kernels
    2 14.5-oz cans diced tomatoes w/chilies
    1 packet taco seasoning
    1 tbsp cumin
    1 tbsp chili powder
    24 oz (3-4) boneless skinless chicken breasts
    chili peppers, chopped (optional)
    1/4 cup chopped fresh cilantro

    Directions:

    Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).
    I also serve mine with crunched up mulitgrain tostidos!

    1 can mushroom soup
    quartered potatoes
    baby carrots
    sliced onions

    cook on low for 6-8 hours. the Coke really makes the veggies have such a great flavor.

    Copied this recipe out of a friend's crock pot cookbook. Made some 'light' modifications and my entire family ate it...my husband said to double the batch next time.

    Cheesy Santa Fe Soup

    Serves: 8
    Serving size: approx. 1 cup

    1 lb Velveeta, cubed ( I used Great Value Easy Melt 2% milk)
    1 lb ground turkey, browned & drained ( I used 85/15)
    15.25 oz can of corn, undrained
    15 oz can kidney beans, drained
    2- 14 or 14.5 oz can of Rotel or similar, undrained
    2 Tbsp. dry taco seasoning

    Combine all ingredients in slow cooker.
    Cover & cook on High for 3 hours.

    You can serve this over chips, rice, tortillas. I made corn bread muffins :tongue:

    These are for the soup only, not including chips, rice, tortillas or corn bread :wink:

    My beef tagine is very yummy.. can be done using chicken instead..
    I prep it the night before then just turn it on before I go to work.. its the most amazing smell to come home to after a long day at work... last time I had it was when we had loads of snow and it had taken me 2 hours to do a 30 minute journey home.. and like most stew type recipes its even better reheated a day or so later... yum!!!

    using extra lean beef split 4 ways its only 404 calories.. using chicken its 381 calories...

    Easiest, tastiest ever.... I usually put about 4-5 frozen chicken breasts and a small bottle of Italian dressing and bell peppers (chopped up in strips, the colored ones) and let it cook on low all day. Shred it with a fork when you get home from work or about 8 hours later. You can put this on a roll or tortilla. So very yummy! My kids love it!

    I making this tomorrow - very good!

    Beer Crockpot Chicken

    1 Whole Cut up chicken
    1 Can of beer - any kind
    1/2 tsp garlic powder
    1/2 tsp basil
    1/2 tsp paprika
    salt and pepper

    Put all ingredients in crock pot - 3-4 hrs on high or 7-8 hrs on low.
