Turkey Salad with bell peppers, mushrooms, onions, garbanzo beans, and cucumbers
I usually eat this with a light vinaigrette dressing on the side or homemade guacamole.
All set for the week! Replacing Chinese take-out with a healthy and delicious meal one day at a time.

This is my 3rd run doing 7-9 salads at once and I have to deal more with the last salad or two having a little brown from the 'head of lettuce' I use in them; nothing worth writing home about though. Honestly I give one or two to my mom to take for her lunch if I'm worried about going over a week (take an extra one to work and give to a co-worker, they are probably going to be asking about it anyway

Simple no bake cake. Base made from whole digestive biscuits with walnuts and a little butter. Then a layer of strawberries slices, then 2% greek yoghurt, then another layer of strawberries and then again.
133 calories/100 g. Made several jars and had breakfast all week.

I'm a Pescetarian so my meals contain seafood (no poultry nor red meat). Here's my most recent one. I usually use brown rice or quinoa but I tried something different. I used couscous and made a stir fry (sauteed broccoli, onions, mushrooms, and sea scallops) with organic/pure Teriyaki sauce drizzled over it.
I've seen a lot of scallops in my life, and no one single one of them was that big!! LOL
They're called sea scallops. Technically organic (caught fresh/wild then frozen). They come in all different random sizes but a single bag of them is highly expensive.
My father used to go diving for scallops when I was growing up, we had them fresh all the time. Just never that big, I wonder if they are a different type to the ones we get in NZ.
I grew up in Florida and we would always go scallop harvesting in the gulf. Found some big ones but never this big. This looks amazing!0 -

Here's how to make the dough. You can use it to make eggs, cheese, spinach, etc whatever you like.
This was enough to make about 15 pies. Each serving of dough (1/15) contains 195 calories, 24 carbs, 9 fat, 7 protein.
Wholewheat flour - 1 cup
White flour - 3 cup
Skim milk - 1 cup (or until the dough is consistent)
0% yogurt - 1 cup
XL eggs - 2 eggs
Extra virgin olive oil - 1/2 cup
Salt - 3/4 tbsp
Yeast - 1 tbsp0 -
