This morning's breakfast: omelet with red onions, spinach, sun dried tomatoes, and feta cheese. 152 calories (1 egg plus 4 servings of egg whites, split between 2 people).

Salad, eggs, some bread... nice low calorie meal.
    dsc1788u.jpg

Mediteranean style chicken (about 300 calories) + 2 scoops of mashed potato with feta and green onions (about 200 calories) for a 500 calories filling lunch.

BF and I were in Rehoboth, DE for breakfast this morning. This is the tofu scramble at Green Man Juice Bar & Bistro, served with a light salad, fresh pineapple, and a side of pumpernickel toast. I believe every morning should start this way.

Been traveling and eating out a lot. Finally made a home-cooked meal - jerk marinaded tofu and veg stirfry, over spinach with pico. Super spicy and very delicious.

    Quick dinner:
Saffron rice and thin steak with blue cheese, onions and fig glaze. 20 minutes, nothing special and tastes great.
Especially easy when cooking for six. Served with mango slices and guacamole (not shown).
