Easy Fried Pickle Alternative

I was craving fried pickles this week and I thought I'd try making a lower calorie alternative. These are surprisingly really delicious and only 140 calories for the whole batch! If anyone is interested here's the recipe:

Note: Pickles in general do contain a high amount of sodium however some of this will be removed when drying off the pickles.

Baked Pickle Chips

Ingredients:
20 dill pickle chips
1/4 cup egg substitute (I used Aldi Fit & Active Egg Substitute)
1/3 cup Italian Style bread crumbs
garlic salt
Non stick cooking spray.

Directions:
Preheat oven to 450 degrees. Pat pickles dry with paper towels. Dip pickles in egg substitute and then in bread crumbs to coat. Place pickles on greased baking sheet. Sprinkle with garlic salt and spray with additional cooking spray. Bake at 450 degrees for 15 minutes turning pickles over halfway through. Serve with low calorie ranch dressing.

Nutrition (20 Pickle Chips): 140 calories, 22 carbs, 1g fat, and 10g protein.

    to further cut the sodium try using panko bread crumbs and just sprinkle with a little garlic/onion powder...

    Thank you! I must make these. I think it would probably work with zucchini too, in place of the yummy deep-fried battered zucchini slices my Portuguese mother-in-law makes, which NEVER fit into my macros but taste soooooo good!! :love:
