boil or bake around 1 lb of potatoes till cooked through
Let them cool a little bit, then put them through a ricer
mound the potatoes, add 3 egg yolks, a bunch of grated parm, salt, pepper, nutmeg, chopped chives and mix together by hand
Add some flour in and work it into the dough with your knuckles, fold the dough over and repeat until you have a dough that holds together
roll out some ropes of the dough and cut into little pillow shapes, once that's done toss in some boiling water until they float0 -

made tofu "egg" salad two ways. both were delicious but the second was especially good
with loads of dill, chives, veganaise and chopped macadamia nuts on a hollowed out wheat roll.
with mashed avocado, celery, parsley, lime, and garlic with soy bacon and sliced tomato on ezekiel toast.

So I do not have a picture but today was my first day with MyFitnessPal. Tonight for dinner I was not sure what to have because i was in a hurry so I ended up having a salad. It was 400 calories and awesome. I had lettuce, grated Parmesan cheese, 6 cherry tomatoes, 1 c of strawberry's, 2 tsp of California french and 3 fish sticks cut up! It may sound crazy but it was awesome.0
