made tofu "egg" salad two ways. both were delicious but the second was especially good
with loads of dill, chives, veganaise and chopped macadamia nuts on a hollowed out wheat roll.
with mashed avocado, celery, parsley, lime, and garlic with soy bacon and sliced tomato on ezekiel toast.

So I do not have a picture but today was my first day with MyFitnessPal. Tonight for dinner I was not sure what to have because i was in a hurry so I ended up having a salad. It was 400 calories and awesome. I had lettuce, grated Parmesan cheese, 6 cherry tomatoes, 1 c of strawberry's, 2 tsp of California french and 3 fish sticks cut up! It may sound crazy but it was awesome.0

For lunch today:
Grilled (cold) pork cubes with a little bit of chili sauce. To go with that, a salad made of baby spinach, chopped up red, orange and yellow mini sweet peppers, a tomato, a celery stalk and a slice of pineapple. With a homemade honey-dijon dressing. SOOO GOOD!!! And only 330 calories!

I finally made salmon today! Broiled it with a soy ginger orange glaze that I brewed up. Pretty yummy !! Had it served up with a veggies stirfry and shirataki noodles, but it looked terrible plated so no pic tonight.
CD - That burrito looks SO good! Omg. There's a place in downtown Toronto which makes the illest burritos I've ever had. If you ever make the trip to Toronto, it's a MUST have. Big Fat Burrito. Gotta eat there0 -

Pork schitzel. Organic range fed pork, breadcrumbs made from my own homemade wheat bread. Dipped in cage free range chickens. Served with vinegar cucumber salad with dill.
