    Chickpea Curry & Quinoa
    Made this last night...delicious!!

    1 cup quinoa
    1/2 onion diced
    3 carrots diced
    3 Garlic cloves
    Chicken broth
    1 cupDiced tomatoes ( can or fresh)
    2 cans chickpeas
    2 tbs curry
    1 tsp turmeric
    Red pepper
    Salt/pepper to taste
    1-2 tb olive oil
    1/3c Greek yogurt

    Sauté onion, garlic & carrot until translucent. Add seasonings & stir for a few minutes. Add tomatoes, chickpeas & broth...bring to a boil. Add quinoa. Cover & simmer for 20 min or until liquid is absorbed. I added more curry & turmeric at the end....add to taste. i also ended up adding more broth to get the texture of the quinoa to my liking. Add yogurt & serve. Approx 450 calories for 4 servings. Good protein & fiber!

    These are the Best!!! Got them off MFP not to long ago. Kid's love them!!!

    Buffalo Chicken Quinoa Bites
    Makes ~24 Bites

    1 cup cooked quinoa
    1 large egg
    1/4 cup chopped onion
    1 cup finely chopped cooked chicken
    1/4 cup buffalo sauce (we used Frank's)
    1/2 cup shredded mozzarella cheese
    1/2 cup panko bread crumbs
    1/2 tsp minced garlic
    salt and pepper to taste

    1. Preheat oven to 350 degrees.
    2. Mix together all ingredients.
    3. Distribute mixture into a greased mini muffin tin,
    filling each cup to the top (1 heaping Tbs each), and press down gently to compact.
    4. Bake for 25-30 minutes.

    Nutritional Information for 4 bites per My Fitness Pal: Calories - 109,
    Fiber - 1, Fat - 4, Protein - 8, Calcium - 6, Carbs - 11

    I just made this, I'm eating it right now. Seriously yummy!


    I make one like this but I throw in some ground turkey, diced tomato/salsa, and sliced bell pepper. mmm! I don't have a recipe but it's almost impossible to mess up. I just cook the turkey and quinoa separately first then mix it all together and simmer :)

    If you have never tried it and you decide to and find you don't care for it. just add it along with your rice or bean dishes

    1 cup cooked (which is 1/3 cup uncooked quinoa) mashed/mixed with 1 can of tuna, then brown in a pan for a few minutes. IT'S ACTUALLY YUMMY!

    I also like to make quinoa cakes for snacks and breakfasts (based off of this recipe http://www.includingcake.com/2013/03/quinoa-power-breakfast-cakes.html ), which is basically quinoa, a mashed up banana, and a bit of flour. I like to put peanut butter on top after they've cooked so they're not overly banana-y.

    I generally throw this recipe into rotation when I'm tired of my green salads. It's also very popular for potlucks, its pretty much always requested that I bring it. Scale it to how much you need, stays in the fridge for about three days. Tastes best if you let it sit overnight.

    Quinoa Salad:

    -for veggies anything works I use:
    cucumbers, bell peppers, red and yellow tomatoes, black olives, chickpeas, and red onions.

    Sometimes I'll throw tuna or chicken in for extra protein.

    quinoa (I cook it in chicken or veggie broth to pick up the flavor a bit)

    Dressing:
    olive oil, red wine vinegar, lemon juice, dijon mustard, salt and pepper. I use more of the acids than the oil. For example, if I'm only making 1 salad I'll use 2 tbsp red wine vinegar, 1 tbsp lemon juice, 0.5 tbsp oil, a squirt of dijon and a dash of salt and pepper.

    I like to bring a tupperware of plain quinoa to work, and add in whatever it is we are serving that day. I work at a banquet hall, and usually I add in some baked chicken breast and shred it up and mix in some BBQ sauce. A while back, we had spinach and feta stuffed chicken breasts for a baby shower, and I decided to ditch the chicken and mixed the spinach and feta mixture in with the quinoa and added a few cherry tomatoes.

    I've seen some salad-in-a-jar recipes with quinoa that I've been meaning to try as well!
