    I blend :
    1 tomato
    1 clove of garlic
    1 small piece of onion

    Then I add a little bit of olive oil in a pan add the sauce till it simmers, and also ad 1 tsb. of Knorr chicken broth. Once the sauce boils I add 1 cup of water and 1/2 cup of quinoa.

    Its really good; taste just like mexican rice.

    I just tried my first Quinoa dish and this recipe is fabulous! Simple, easy, and delicious. I have a picture of it on my blog:

    Quinoa Primavera (adapted from An Apple A Day)

    Ingredients:
    1 medium zucchini, chopped
    1 medium yellow squash, chopped
    1 red onion, chopped
    1 red, yellow, or orange bell pepper, chopped ( I used one red and one orange)
    12 cherry tomatoes, halved
    3 cloves garlic, minced or pressed
    1/4 TBSP olive oil
    2 c. uncooked quinoa
    1/2 c. grated Parmesan cheese (I used fresh Parmesan cheese, not the pre-grated powdery stuff)
    3 TBSP minced fresh basil
    3 TBSP minced Italian parsley

    Directions:
    1. Preheat oven to 450 degrees F.
    2. In a large rectangular baking dish, toss together vegetables, garlic, and olive oil. Place in oven for approximately 20 minutes.
    3. Meanwhile, cook quinoa according to package directions. (I cook mine in the rice cooker and it turns out wonderful!)
    4. When quinoa and vegetable are done, toss together in baking dish. Stir in cheese, basil, and parsley. Taste and adjust seasonings, as desired. Serve immediately.


    Yields: 6 main dish servings at approximately 345 calories per serving

    I saw this recipe on Pinterest and I made it last week. It was AMAZING. I did leave out the onions because I find them too strong, esp if the salad is going to be eaten over a couple of days. If you are allergic to peanuts, just substitute another nut butter. I was worried about the taste of the cabbage in it, but you don't even taste it, it just adds more crunch. My husband won't eat stuff like this, so it made too much for me to eat even though I ate it every chance I got. Next time I will cut the recipe in half so I don't waste any. It would be super with some grilled chicken or shrimp thrown in to make a meal. Crap, now I'm hungry.

    I read this yesterday and made it last night. It IS amazing! I used cashews and edamame (and lots of onion) and put a little sriracha in the dressing. Husband loved it, too. Thanks for sharing it!

    It's hard to say you will just have to give it a try but the best way I think I could describe it would be a nuttier, chewier rice.

    Quick and Easy

    Quinoa - cook as directed
    Add a couple cans of tomatoes/green chilies
    1 Avocado diced

    Eat cold or warm up

    My favourite quinoa dish, great on its own or as a side:
    1. Bake diced pumpkin or butternut squash and 5 cloves of garic (do not peel) on 170c for 30-40 min.
    2. Cook 1 cup quinoa with 2 cups water or chicken broth
    3. Mix cooked quinoa and squash, add crumbles of soft goats cheese, chopped roasted garlic, chopped 1 red chilli, fresh thyme, zest of lemon, chopped fresh rosemary and salt to taste.

    The sweetness of roasted squash, the creamy tangines of goats cheese, the freshness of the herbs with the bite of chilli is sooooooo good!
