What to do with sweet potatoes?

cut open spread with 1tsp smart balance or whatever kind of butter you deem worthy, more salt and some cayenne pepper.
(you need very little butter and oil so it's not like breaking the bank on cals, but makes a huge difference in taste. the cayenne makes it interesting together.)0 -
someone recenlty posted a way to fix regular potatos as a healthy fry option and I'm thinking it would be good with sweet potato's as well.
Wash the potato, then slice like you would a potato chip BUT leave it attached at the bottom. Do a drizzle of EVOO and then broil. She used sea salt, I'm thinking a sprinkle of cinnamon might be nice.
The regular potatoes are really nice if you mince garlic and put that between the slices, or put sliced shallots in them. drizzle with olive oil and a bit of salt/pepper.
That does sound really good for the sweet potatoes! I'd probably make mine a bit unhealthy though, with some butter rubbed in between the slices and sprinkled with a brown sugar cinnamon mixture
2 sweet potatoes to 1 regular potato both microwaved (or baked, I rarely have time for that) and roughly mashed up with a sprinkle of chopped chillies, fresh coriander and a bit of feta cheese is lovely.0 -

I have 2 really good easy options for sweet potatoes!
First one really tasty and easy, cut them into long wedges and par boil for about 10 mins, then roast (season with salt and a little olive oil) for about 10 mins (or until crispy brown on top). Then dip into either sour cream or mint yoghurt dip (greek yoghurt or plain yoghurt with a little mint sauce).
second option, they are great in fishcakes - mash together boiled sweet potatoes with pollock {(or any other white fish, some fresh herbs, pepper, a little lemon, salt/pepper, golden breadcrumbs and mix then mold together. Wrap in cling film (in small ball shapes) and leave to set in fridge for 30 mins or freezer for 10. Then grill on med-high heat on each side for 15-20 mins (when firm and golden on top). No need to use egg if you are careful enough.0 -
that sounds delish, gonna give that ago this weekend, also butternut taste very similar roasted and less calories than sweet potatoes.0

Grab a Bombay Spiced Potato mix and knock it up with sweet potatoes instead for a sweet/spicy flavor combo. Works every time for me and I use no fat of any kind to make it up. Onions, Sweet Potato, Tomatoes (tinned usually), Bombay Spice mix and chicken or vegetable stock. Feel free to chuck in other veg or even chicken breast. For additional flavor, add smoked paprika and Maggi Instant Seasoning. YUM!

Did them grilled over the weekend. Nice addition to summer grilling! Cut them into 1/2" wedges, place in ziplock with olive oil, rosemary and garlic. (I used minced garlic and dried rosemary, but fresh can be used or powder). Don't recall the measurements, but it would depend on how much sweet potato you used. I just shook it up, let it marinate for an hour or so. Grilled on medium 10 mins (or so depending on thickness) each side.

Wow I love sweet potatoes because they are so versatile. One of my favorite ways is baked sweet potato fries. They require only 5 ingredients and about 20 minutes. Check the recipe on my site http://www.injoymint.com/blog/article/?sid=1080

I eat them raw sometimes. Just slice em up & refrigerate them. They taste kind of like carrots.0

Put them in a microwave bowl with cover. Then add little bit of water on the bottom. Place in microwave and nuke for 5-8 minutes.
Take out and let cool down, then eat with skin.0 -
Boil then mash with a little milk! Perfect side to any meal!0

Throw in the microwave for 3-4 minutes in a ziplock, cut in half, top with diced chicken, steamed carrots and celery, blue cheese, and buffalo sauce... DELISH0

I made Lemon Miso Roasted Sweet Potatoes the other night - they were fantastic. I ended up with 6 servings.
2 Large Sweet Potatoes, cut into chunks
1 Leek, coarsely chopped (white and light green portion)
1/4 Cup White Miso
4 Tbsp Rice Vinegar
3 Tbsp Olive Oil
3 Tbsp Tamari (or soy sauce)
1 Lemon (zest it and juice it)
S&P to taste
Preheat oven to 400 degrees.
Mix up the miso, vinegar, olive oil, tamari, lemon zest and lemon juice. Taste the sauce and decide if you need salt and pepper (it's really salty as is, but when you add it to the sweet potatoes, it totally mellows out). If it's too salty for you, add a little honey. Pour over potatoes and leeks and then spread evenly on a baking sheet.
Cook for 40 - 60 minutes.

These are some great ideas!!!
I love them just plain baked, however we were discussing them at a family gathering this weekend and someone said that if you bake them first, let them cool and then freeze them individually wrapped in aluminum foil they end up sweeter.. This person bakes a whole batch then defrosts them one at a time as a side for their meal.0 -

Just last night, I decided to try peanut butter on my baked sweet potato. It was awesome. Just the right amount of sweetness and creaminess. I imagine any nut butter would be good. It does add calories, but it's a good source of protein and healthy fats.0

We cube them, a little oil, chipotle or southwest seasonings, mix em with halved brussle sprouts and bake! MMM.0

The only kind of sweet potatoes I've ever had are 'loaded', aka tons of butter, sugar and cinnamon, baked sweet potatoes. For some reason, I bought some the other day and I really want to do something a little healthier with them but I'm not a good cook and I don't know what else to do with them. Thank you!!
1 serving 8oz of potatoes
Cut your potatoes into fries. Add desired spices in a bowl. I use onion powder, garlic powder, Italian spices.( or to make with coating all of these and 1/2 cup of oats. (mix all spices and oats into blender)
After soaking potato to remove any extra starch, dry, add fries into a plastic storage bag with 1 tablespoon of olive oil, mix. Add spice mix into bag, shake. Poor into baking sheet and into the oven they go. My wife literally wants this ever night for supper.0 -
Put them in a pot with rocks and cook until they are soft and sweet and ommmmg om nom nom0

Cut 1 sweet potato into wedges
Toss with 1 tbsp olive oil and as much cayenne pepper as you like
Roast in oven at 450, flip after 15 mins
Should be ready in another 10-15 mins0 -
My favorite way is roasted in the oven and then eaten with a bit of Promise, S&P.
Other ways are cubed and roasted with other root veggies -beets, turnips, parsnips, carrots and rutabega -toss in a bit of olive oil, sprinkle on garlic, pepper and thyme. Try them skewered and on the grill...OMG!
Like another poster said, anything you can do with white potatoes you can do with sweet potatoes.0
