I saw this recipe on Pinterest and I made it last week. It was AMAZING. I did leave out the onions because I find them too strong, esp if the salad is going to be eaten over a couple of days. If you are allergic to peanuts, just substitute another nut butter. I was worried about the taste of the cabbage in it, but you don't even taste it, it just adds more crunch. My husband won't eat stuff like this, so it made too much for me to eat even though I ate it every chance I got. Next time I will cut the recipe in half so I don't waste any. It would be super with some grilled chicken or shrimp thrown in to make a meal. Crap, now I'm hungry.
I made this, too--delicious! My husband even liked it (well, until I put cilantro in it and ruined it for him). It definitely made a full week's worth of lunches for me.0 -

Mine's the most simple - leftover quinoa and Kirkland raspberry spread. Perfect replacement for a PB&J, or to satisfy that sugar craving quickly and efficiently. Or maybe I've been dieting too long....0

Fruit with Quinoa
Fresh fruit any type, I prefer strawberries and grapes,
dressing of;
-apple cider vinegar
-fat free yogurt
-honey or agave nectar
Mix dressing together,
toss with fruit and quinoa and "little of the dressing" :-) chill, Love it :-)

This week made a new quinoa combo:
2 tbsp. coconut oil or olive oil
1 tsp sugar
1 small sweet onion, diced
1 cup white quinoa
1 can black beans
1 cup thai chil-lime cashews (found at trader joes, u could do without or use plain if you wish)
1 cup frozen mango chunks
2 tsp honey
1 tbsp. mustard
2 tsp chili powder
2 tsp cumin
1/2 cup water
1. Caramelize onions with oil and sugar, slow cook on medium-low for about 30-40 minutes or until onions have nice caramel color.
2. cook quinoa according to package directions.
3. In a blender: mango and remaining ingredients.
4. Stir rinsed black beans, mango sauce, and cashews in with quinoa, heat on low for 2-3 minutes, serve!

I add chicken, tomatoes, and cucumbers to cold quinoa with a drizzle of Greek salad dressing......yummy and filing......I also have added some feta cheese every once in a while. Onions are an option too ( if you like them)0

When I make black bean burgers I add in quinoa for an extra protein boost and it also gives it a nice meaty texture. 6 patties at only 150 calories each with 7g of protein
1 Can Black Beans rinsed and drained
2 Minced garlic cloves
1 Tsp olive oil
1 Egg
1 Egg White
1/2 cup bread crumbs
1 cup cooked quinoa (I prefer the red type but I'm sure the regular one is fine)
Any desired seasonings/spices
1.) Blend black beans, olive oil, and garlic in a food processor or blender until it forms a thick paste.
2.) Add in eggs, bread crumbs, and quinoa and mix thoroughly.
3.) Form into 6 patties and fry/grill over medium heat for 4 minutes on each side.

One of my favorite for breakfast. 1/2 cup cooked quinoa, 1 tablespoon peanut butter, 1 tablespoon honey. Microwave for 30 seconds. Stir, cream together, enjoy.0
