    I ended up making this and it was yummy!

    Next time I'll leave the juice from the pineapple out, though. It was too liquidy for me - but still soooo good!

    I just put this one in the crockpot except I used fresh pineapple and I added 1/3 cup ketchup to the soy sauce and brown sugar mix. I'll jump back on later and report on results.

    I changed it up a bit, I needed a dinner quicker than 6-8 hours. So I took the chicken and cut it into about 1" pieces, cut up all the veggies except the carrots, due to their taking way too long to cook, and exchanged fresh mushrooms for them. Cut up the pineapple rings and saved the juice.

    Put 2TBLS of olive oil in a 4quart pot, browned the chicken chunks, put in the pineapple and it juice, then all of the veggies. I first brought it all to a boil, then turned it down to medium and simmered it top on for about 30 min. The sauce was a bit thin, so I took 1tbls of corn starch and about 1/4 cup warm water, dissolved the corn starch and added it to the pot. Brought all to a boil and let simmer for another 15 min.


    We ate this as in with no rice, but I believe some brown rice would make a great addition.
