    I read through all the replies to make sure I hadn't missed an answer to my question.

    Did you use smooth or crunchy peanut butter? Do you think it would matter? I only have crunchy PB at home and we can't get PB2 here in Australia (I've tried...) so if smooth only, I can go and get some, but if crunchy I can make them tomorrow!

    I don't think it would hurt, in fact it might add some nice texture. I love extra crunchy peanut butter, and might try to make these with some Greek yogurt in place of some of the milk. The chocolate chip addition sounds awfully good, too... hungry.gif

    This sounds really yummy. I'm going to have to cook some and see how they freeze for the school year. They'd be great to grab on my way out the door for a quick morning snack.

    I found these not great. I wasn't a fan of the texture and they were bland as all hell. Need something sweet like choc. chips, applesauce or even more PB to make more pleasant. I'll try to tweak these to make them more tasty for me. Used crunchy PB. Thanks for the idea though!:smile:

    The recipe as is made 11 regular sized muffins and when I calculated using my ingredients:
