    It depends on what I'm putting it on/in. We typically have at least 1/2 dozen different hot sauces in our fridge at all times. Different brands and flavors of mustards, vinegars and hot sauces pretty fill the entire door of our fridge.

    Every time I think about hot sauce, which is a lot because I put spices and hot sauce on most of my food, it makes me wish I lived in 'Merica. We have about 2 hot sauces down here (Tobasco and Cholula) unless you count the asian-style, which don't tend to go as well with lots of different foods.

    Yeah it really depends on whats on the plate ><. Franks for general use, Sriracha on chicken and scrambled eggs or anything noodle(y). I also will admit more than a slight addiction to some of the sauces at Buffalo Wild Wings, Spicy Garlic and Mango Habenero in particular, but those are a once in a while thing cause the salt in them make me cringe.

    I'm so envious of all you 'mericans. We have damn all here in the way of good hot sauce. When I visit my g/f in Texas my case is clanking with bottles of hot sauce. I love Texas Pete's and Louisiana hot Sauce.
    the best you can get in England is Tabasco which is like p*** IMHO.
    However, I now make my own with Kashmir chilli and mustard oil. Blows your plums off!!

    tobasco, franks, etc...are just not hot enough.

    I have this in green and it is literally the hottest I have ever tasted. I also have 6 other kinds of hot sauce in the fridge, depending on the occasion. Currently out of Tapatio, my son points out with a very sad face.

    Discovered this stuff when I was in Belize. I love many different hot sauces, but this one is my all time favorite...

    I put this stuff on everything when I was down there...was awesome with potato salad, rice and peas (beans), and on my daily omelette.

    Home Made Chinese Chilli Oil

    8 cloves of minced garlic
    Bunch of spring onions, minced
    A cubic inch of fresh ginger, minced
    A cup of dried red chilli flakes
    A dash of soy sauce and salt to taste. A pinch of sugar or squeeze of lemon to taste works too.
    A cup of olive oil.

    Put dry ingredients in a heavy glass bowl that can withstand heat. Heat up the oil as hot as you can (until it starts to smoke). Pour hot oil onto the dry ingredients Adjust seasonings to taste.
