Eh...these didn't really do it for me. Even adding a little salt to the batter didn't make it more flavorful. A little too bland for my taste.0

Wanted to share a good recipe I tried out last night for Peanut Butter Banana Oat Muffins, they turned out really well! My friend shared a version of this with me and I tweaked based on my taste.
Ingredients:
1 ¼ cup old-fashioned rolled oats
1/2 tsp. baking powder
3/4 tsp. ground cinnamon
1/4 cup softened peanut butter
1 cup milk
1/4 cup egg whites
1 mashed banana
1 tsp. vanilla extract
Yes I tried these about 3months I was experimenting cause I didnt have wheat flour and I needed something sweet, but I didnt use eggs I used unsweetned almond milk and a little of canola oil
Directions:
• Preheat the oven to 375F.
• Lightly grease a muffin tin (makes 6 large or 12 small)
• In a medium bowl, mix all dry ingredients
• In another bowl mix all liquid ingredients.
• Add liquid mixture to dry ingredients and stir
• Divide mixture evenly in muffin pan
• Bake for 22-25 minutes, until the top is browned and the oats have set.
• Let cool before serving.
Nutrition (per muffin based on 6 large muffins):
Calories - 166
Carbs - 21g
Fat - 7g
Protein - 7g0 -
