I fire up the grill 4-5 days a week - and on the days that I am not firing up the grill I am eating leftovers from the day before. I have a busy week coming up so I cooked a bunch of chicken breasts yesterday to go in my lunches (salads) for the week.
A few from the back porch...
As much as I love bacon I have gotten good at using it for taste then passing it to someone else.
Veggies all set to go!
Searing some fresh caught fish with some blackened seasoning.
One of the toughest adjustments - I love ribeyes!!! I just won't eat them as often. I have gotten better and better at cooking the leaner cuts. I will save the ribeyes for special occasions.
Some "Naners" sprinkled with a mix of splenda and cinnamon - drizzle with a little chocolate syrup and its hard to beat. I like them with just the splenda and cinnamon, it crusts over just enough.
Pork tenderloin for me with some veggies... pizza on the grill for the kids
A little beer butt chicken. As good as it is I have moved to cooking my whole chickens "spatchcock" style that turns out better IMO.. still a good way to infuse some taste. (And I use Shiner Bock for my beer butt cluckers)
Chicken thighs trimmed with loads of veggies. I remove the skin from the thighs, season underneath then put the skin back on while cooking. It helps protect the meat. I toss the skins to the pups once they cool off.
Some lean beef meatloafs.... everyone loves the ends around here so cooking smaller loaves makes the family happy all the way around.
One more... from last night. Celebrating mama's birthday and she wanted a steak (my specialty!!!) I did good and cooked the family big fat juicy ribeyes and cooked myself a couple of small sirloins, one for last night and one for lunch today.... that reminds me that it's time to warm it up for lunch. Going to add in a great big salad made with baby spinach, tomatoes (fresh!), onion and a little balsamic vinaigrette.
(the place mat is a custom birthday poster that my kids made for my mom.... very sweet)
