I had a fabulously crunchy apple.
This reminded me, while I was walking my dogs in an area I hadn't walked for years, I came accross a group of apple trees. A whole lot were lying on the ground, but I picked one from the tree and ate it, it was a McIntosh, and it was so delicious, I had forgotten how good apples are fresh from the tree.0 -

A veggie cheese omlet made of leftovers. I had a quarter-full bag of frozen thai stir-fry veggies in the freezer that I have been trying to use up for ages, but no recipe appealed to me. I also used leftover butter, eggs, and leftover cheese.
Recipe:
Stir-fry frozen veggies in frying-pan, on medium-high heat, in 1/2 tbsp unsalted butter until browned. Set aside.
Coat skillet with 1/2 tbsp unsalted butter. Add 1 whole egg, 2 egg whites, 30g jalapeno havarti cheese, and the stir-fried veggies. Mix well and cook on medium-high heat, turning once, until eggs are completely cooked.
