    Check out skinnytaste.com under recipes at bottom of page all kinds of dishes with pumpkin.They are all reasonable calories.I make a baked pumpkin oatmeal from that side that is just to die for good. Enjoy

    Mix a can of pumpkin with angel food cake mix! Not too high-calorie.

    PUMPKIN ANGEL FOOD CAKE
    Ingredients
    1 cup canned pumpkin
    1 teaspoon vanilla extract
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon ground cloves
    1/8 teaspoon ground ginger
    1 package (16 ounces) angel food cake mix
    14 tablespoons reduced-fat whipped topping
    Additional ground cinnamon, optional

    Directions
    In a large bowl, combine the pumpkin, vanilla, cinnamon, nutmeg, cloves and ginger. Prepare cake mix according to package directions. Fold a fourth of the batter into pumpkin mixture; gently fold in the remaining batter. Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets.

    Bake on the lowest oven rack at 350° for 38-44 minutes or until top is golden brown and cake springs back when lightly touched and entire top appears dry. Immediately invert pan; cool completely, about 1 hour.

    Run a knife around side and center tube of pan. Remove cake to a serving plate. Garnish each slice with 1 tablespoon whipped topping; sprinkle with cinnamon if desired. Yield: 14 servings.
  • You can take a cake mix in a box, and mix it with a can of pumpkin pie filling, instead of the oil and eggs and stuff, and bak3 it according to box directions, and make muffins out of it. I made this a couple times and the pumpkin makes it very moist, so the consistency is very rich, but it really cuts calories! You can add chocolate chips if you like the flavor combination, or nuts, and it breaks up the smoothness, giving it more texture, amd they don't add an awful lot of calories. I'm looking forward to this fall so I can make more!

    Came in to post a white chocolate pumpkin scones recipe. Saw that you wanted something with less cals than pumpkin bread and am now backing out slowly. :laugh:

    I sprinkled some oats before baking.

    Already posts that one... and water is not even needed... they are all moist without water, and you are able to put them in the freezer and it them right away if you want without waiting!

    Bumping! Love pumpkin-everything - kills me it's so hard to find canned pumpkin here in the UK, and we don't get anywhere near the range of seasonal pumpkin-flavoured products!

    I love to crockpot this time of year! Don't know if Anyone posted this recipe yet, but it is one of my new favs. My husband's boss asked for the recipe because it smelled so good when he brought in leftovers for lunch.

    Crock Pot Turkey White Bean Pumpkin Chili
    Gina's Weight Watcher Recipes
    Servings: 9 • Serving Size: 1 cup • Old Points: 3 pts • Points+: 5 pts
    Calories: 182.6 • Fat: 2.3 g • Protein: 23.3 g • Carb: 10.9 g • Fiber: 8.8 g • Sugar: 2.1
    Sodium: 429.8 (without salt)

    Ingredients:
    • cooking spray (I used my Misto )
    • 2 lb 99% lean ground turkey
    • 1/2 tsp olive oil
    • 1 small onion, chopped
    • 3 garlic cloves, minced
    • 1 tsp chili powder, to taste
    • 2 bay leaves
    • 2 tsp cumin
    • 1 tsp oregano
    • 2 (15 oz cans) of white northern or navy beans, rinsed and drained
    • 15 oz can pumpkin puree (not pumpkin pie filling)
    • 4.5 oz canned chopped green chile
    • 2 cups low sodium, fat free chicken broth
    • fat free sour cream for topping (optional)
    • chopped cilantro and chives for topping (optional)
    • salt and pepper to taste

    Directions:

    Heat a large heavy saute pan over high heat and lightly spray with oil. Add meat and cook, breaking it up until white, about 5 minutes. Add to crock pot.

    Add oil to the saute pan, then onions, garlic, sauté about 3 - 4 minutes; add cumin and sauté another minute.

    Add to crock pot. Add beans, pumpkin puree, green chilis, broth, chili powder, oregano, and bay leaves. Cover and cook on high for 4 hours or low for 8 hours.

    Remove bay leaves and adjust seasoning to taste before serving. Enjoy!

  • That chili recipe looks great! I'll just take out the turkey, and maybe sub with some extra beans or tofu to try and match the protein profile. I feel silly for forgetting you can put pumpkin in with chili!

    I've been basically having butternut squash on the side of all my dinners, because 200g of it I find is rather filling, and comes in under 90 calories, and I think pumpkin is even lower in calories!

    I just found this one yesterday.

    Slim Pumpkin Cheesecake Bars
    • 1 box angel food cake mix- the 1 step kind
    • 1 15oz can Pumpkin
    • 3/4 Cup water
    • 1/2 teaspoon cinnamon
    • 1 8oz pkg. Greek Cream Cheese OR may use reduced fat cream cheese
    • -few tablespoons of water for smoothing the cream cheese

    Soften the cream cheese then add it to mixer & beat it with a couple of tablespoons of water until smooth to thin it out.

    In a separate bowl, mix the cake mix, pumpkin, water, & cinnamon together until it is smooth & well mixed.

    In a 9x13 cooking dish- sprayed with non-stick cooking spray- add HALF of the cake –pumpkin mix. Then smooth it out. Drizzle half of the cream cheese over the top and take a small spatula to smooth it over the top. Add remaining cake mix and then the remaining cream cheese. Finally take a butter knife- stick it into the mix and go back & forth over the top of the cake to create swirls.

    Bake for 35 minutes at 375 degrees OR until a toothpick comes out clean.

  • Pumpkin Cheesecake

    Cook Time: 40 minutes

    Total Time: 1 hour

    Ingredients:

    1/2 cup Ginger wafer cookie crumbs (about 10-12 wafers)
    1 8-ounce block of fat-free cream cheese, softened
    1 8-ounce block of reduced fat ceam cheese, softened
    1/2 cup canned pumpkin
    1 tsp cinnamon
    1/2 tsp ginger
    1/4 tsp cloves
    1/2 cup sugar
    1 tsp vanilla extract
    1/2 cup egg substitute
    Preparation:

    Preheat oven to 350 degrees. Spray bottom of a 7-inch removable-bottomed tart pan with butter-flavored cooking spray. Sprinkle cookie crumbs on bottom of pan. Spray briefly with cooking spray and press crumbs down. Cook base for 10 minutes, then remove from oven.
    Place cream cheeses, pumpkin, spices, vanilla and sugar in a large mixing bowl. With an electric mixer beat on medium until throughly blended. Add egg substitute and beat on low until blended.

    Pour pumpkin cream cheese mixture on to ginger cookie crumb base. If you have a little left over, pour it into a ramekin to cook alongside the cheesecake.

    Bake cheesecake for 40 minutes until just set.

    Serves 6-8.

    My fav pumpkin is so easy. Trader joes makes a pumpkin bread mix that I make muffins with and add white chocolate chips to. They're the best! IDK if they're healthy, etc. but delicious definitely!

  • I found Pumpkin Butter at my Farmers Market (think of Apple Butter but Pumpkin instead of apple). Not sure how they made it but it is very tasty

    This is my latest addiction and it is wonderful!!! Pumpkin Fluff, my version, makes 10 servings at 63 calories per serving.

    Pumpkin Fluff

    1 can 29 ounces canned pumpkin. Not pie mix, plain pumpkin
    1 - 2 teaspoons cinnamon
    1 - 2 teaspoons pumpkin pie spice
    dash allspice or nutmeg
    1 box, 4 serving sugar free vanilla pudding. Do not mix with milk, add dry.

    Mix these ingredients together well, until the spices and pudding mix are well incorporated.

    Now add about 3/4 of a 16 ounce tub of cool whip light, fold into the pumpkin mixture well.

    Refrigerate for at least 2 hours to set, but it is better the next day. Enjoy pumpkin decedance for a small calorie count and you will see why I am addicted!!

    This is really yummy with ginger snap cookies to dip in it...

    Pumkin muffins... quickest and tastiest low cal muffin ever (actually a weight watchers recipe)

    1 can pure pumpkin
    1 box spice cake mix

    Pre-heat oven to 350. Combine pumkin and cake mix until well mixed.

    Grease muffin tin/put liners in - fill to the top and bake for 30-40 minutes.

    I added a swirl of cinnamon and all-spice, it was a nice extra kick.
