    Don't know if this was mentioned but I only use onion flakes in liquid dishes since they need to rehydrate. That's gonna suck some moisture up. Also I'd cover it to cook so it can steam a little and keep its moisture.

    Try adding another egg white and 1/2 cup more of milk.

    My meatloaf recipe sort of splodges into the baking tin. :) By the time it's cooked it's fine.
