Well, I was super pleased with my lazy Sunday dinner until I saw that! ^^
This was amazingly tasty for how simple it is. Carrots, broccoli, and turkey frank coins simmered with thyme and topped with a hard-boiled egg and tons of Cholula. It's not gourmet but it was really good, filling, and easy, and the macros are pretty great too.0 -
an old one but i didn't want to just bump:

This was our dinner tonight. It had potential to be VERY tasty, but the recipe (below) was a bit heavy on the salt for my taste. I will make it again though with a few small changes & maybe add some mushrooms.
Roasted Shrimp & Broccoli
www.FoodiesNetwork.TV
1. Heat the oven to 425.
2. On a large cookie sheet, toss together 2 pounds of broccoli cut up into florets (but not teensy tiny florets, I like a little stem attached), 2 Tbs olive oil, 1 teaspoon whole coriander seeds (or 1/2 tsp. ground), 1 teaspoon whole cumin seeds (or 1/2 tsp. ground), 1 tsp salt, 1/2 tsp pepper and 1/8th tsp hot chili powder. Spread into a single layer and pop into the oven for 10 minutes.
2. Meanwhile, toss together one pound large shrimp, shelled and deveined, with 2 Tbs olive oil, lemon zest from one lemon, 1/2 tsp salt and 1/2 tsp pepper (I just eyeball the salt and pepper) in a bowl. When the broccoli’s been in the oven 10 minutes, add the shrimp to the broccoli and toss (carefully.)
3. Roast another 10 minutes, tossing once halfway through, until the broccoli is “tender and golden around the edges0 -

You have to resize the pictures in picasso or photobucket to make them visible on a normal screen. I used 400x600ish pixels and it's usually just fine.how do I post a picture
Then just swap the upper-case "IMG" for lower case "img" before and after the link.
Good luck.

I take a little time to plan my menus before I shop. My lunches are usually part of last night's dinner. I make a couple of dishes on the weekend that only require a quick side dish and I have most of my veggies prepped and ready to use.0 -
