Green thai curry with shrimp and basmati rice!
GF raspberry swirl cheesecake
Veggie roll and shrimp and crab rolls with thai chili sauce.
Soft boiled egg on GF toast with some honey ham.
GF pasta shells in a garlic tomato sauce with tons and tons of cheeeeeese!

I have a whole bunch from the weekend; bear with me.
Friday's work lunch: chicken Caesar salad, fried polenta triangles with herbs and Parmesan, egg muffin with Cholula.
Saturday job-hunting lunch: fried polenta topped with sundried tomato pesto on a bed of spinach, beet greens, chard, and tomatoes sauteed with garlic.
Sunday breakfast: whole-grain waffle with strawberry preserves, grapefruit and strawberries, fried ham.
Sunday lunch: avocado, chicken, and cheese open-faced broiled sandwich on 10-grain toast, beets and mixed greens with Caesar dressing.
Sunday dinner: 15-bean soup with carrots, tomatoes, and salt pork.
This morning's breakfast: new egg muffin (mushrooms, olives, tomatoes, scallions, cheddar, dill), banana, English muffin with strawberry preserves.
Aaaaaand today's lunch: Turkey-and-greens sandwich on 10-grain bread with sundried tomato pesto, salad of beets and avocado dressed with lemon and dill.0 -

Tomato kanga banga cottage pie with sweet potato topping and salad with French dressing. This serving was about 400 cals but I only ate half cause it was filling

Cashew Chicken Bake (basically just mix all the ingredients you'd find in cashew chicken stir-fry, brown rice, and bake in the oven like a casserole) Yum!0 -
Tonight's dinner: Peppered elk steak, stir-fried peppers and leeks with an avocado-filled baked sweet potato and splodge of horseradish sauce. YUM.0

Not to brag, but I had the best lunch ever today. Sautéed greens, tomatoes, and chicken (I pre-cook the chicken in garlic and sherry on the weekends) with garlic, fried polenta with sundried tomato pesto, half a juicy grapefruit. I could eat this mess for weeks.0 -
