Pan-fried garlicky chuck steak and cherry tomatoes, SO FREAKING GOOD. I had it with an artichoke and lemon butter (1.5Tbsp butter, 1tsp I Can't Believe... spray, .5tsp lemon juice, sprinkle of salt) for a total of 385kcals, 13 carbs, 26 fat, 27 protein, 6 fiber, 24 iron. I am stuffed and happy.

Deeva - how do you get your pumpkin so perfect? Give me all the secrets!

umm.... I put a 'glug' of olive oil in a bowl (say a tablespoon full?), with a generous pinch of sea salt, and whatever herbs/spices I feel like (usually fennel seeds, or chilli flakes or paprika), and then I put my pumpkin and potatoes (for the boys) in the bowl, cover it with a plate and jiggle it about until everything is evenly coated.

Then I tip it out to a baking tray lined with baking paper (so there is nothing to wash-up!), and whack it in the oven at approx 200C for 45ish minutes, depending on how big the pumpkin bits are.

    Done. Easy.
Lovely. I'll give it a go. I usually just bake mine au naturel ;)

Chris that hickory smoked chicken looks wicked, friend!

Inspired by a Dahllywood image of chicken and sweet potato, I decided to make this tonight:

    I4Ccqis.jpg

BBQ Chicken, asparagus, tomato with half a sweet potato and a small regular jacket potato, both filled with extra light cream cheese with chives, some chedder and jalepenos.

Next time I'll be using cottage cheese as a filling and only a sweet potato.

I just recently got hooked on the books entitled "Taste of Home Comfort Food Cookbook Diet" and they have some yummy stuff in there. I have made several things and they have all been great and are low calorie etc.
