Corned beed with horseradish cream, pumpkin and beans and peas stir-fried with black garlic.
I visited a friend over the weekend, when I asked her if I could bring something she said "Ohh, one of the slices you are so famous for." I don't know if she had me confused with someone else, but I have never been famous for my baking. Rather than an awkward conversation, I made a slice. Peanut/almond butter with oatmeal as the base, caramel centre and a chocolate topping.

umm.... I put a 'glug' of olive oil in a bowl (say a tablespoon full?), with a generous pinch of sea salt, and whatever herbs/spices I feel like (usually fennel seeds, or chilli flakes or paprika), and then I put my pumpkin and potatoes (for the boys) in the bowl, cover it with a plate and jiggle it about until everything is evenly coated.
Then I tip it out to a baking tray lined with baking paper (so there is nothing to wash-up!), and whack it in the oven at approx 200C for 45ish minutes, depending on how big the pumpkin bits are.
