Banana Mug Cake

If you love warm and delicious banana bread then you are going to love this!

1 egg
1/2 of a banana
1 packet of stevia
some cinnamon
1 scoop of vanilla protein powder
and a tsp of vanilla extract

Mash it all up and throw it in the microwave for 3 minutes and what I do after is take it out of the mug and put 1 tbsp. of peanut butter on top! Delicious!

    Sounds tasty. Does it "fluff up" similar to when you cook an egg in the micro ?

    sounds awesome!! i wonder if it would work if i used flax as an egg replacement (which I have done in other recipes before).

    hmm interesting! I use the exact same recipe to make pancakes all the time, but I never thought of microwaving it! Will probably give it a try tomorrow :D

    Thanks... Been craving banana bread and this is much better than making a whole loaf, and less calories! It wasn't bad! A bit dry, I'll try less protein powder next time... or maybe add a bit of milk. I did it in a bowl and not a mug and it was pretty much full after 2.5 minutes. Had some almond butter on top.

    This is amazing - only took half of 3 minutes for me...maybe my mug was too small but it was lovely - had mine with cashew butter and was like the perfect breakfast!

    baltimorebroa...: I think the nutritional info is based on a few things like how big the banana you use and the type of protein powder. I created it as a new recipe and this is my nutritional for it:

    Calories: 232
    Carbs: 18g
    Fat: 7g
    Protein: 26g

    One I'll have to remember for my over-ripe bananas :smile:

    I tried with 30g of Greek yogurt to make it moister... it worked! Delicious with some jelly on top too..
