    I made a soup with a bunch of veggies.

    In my crockpot, I put a carton of veggie stock in, and threw in a head of cauliflower (that I chopped up). When the cauliflower was soft, I used my immersion blender to puree it all. Then, I added a whole onion (I cut it in slices and sauteed it), a bunch (4 cups?) of Kale, 8 oz of diced chicken breast, and a can of drained/rinsed Navy beans. I let it cook for about 3 hours, then added a cup of (cooked) brown rice.

    I think it was pretty good, considering it was made with odds and ends of what I had.

    I tried a new burger tonight. I mixed 20 oz ground turkey with 16 oz ground turkey sausage. Added 2.5 oz quick oats, an egg, 2 tbs pickled Jalapeno slices, salt, pepper, garlic powder and roasted garlic and herb seasoning. I got it a little too salty, but very good other than that. Also had a salad {with crumbled up burger} Margarita low sugar pie and orange slices.

    I'm about ready for some bean soup. My problem is that I make too much, and have to freeze about half of it. Then it gets lost in the freezer and never gets eaten.

    We had supper over at my cousin's house. Chris made his famous Honey Teriyaki and Jerked wings. Cousin Dee made baked beans and her layered cookie bars. My wife made broccoli salad and pineapple/orange casserole. It was all very good.

    Pizza on two whole wheat flour tortillas. Double them up...baste with olive oil that has garlic, and herbs in it. Then put on mozzarella . cheese, spinach, turkey pepperoni, and mushrooms. On the side, strawberries dipped in fat free whip cream, and raw carrots. Heat the pizza at 350 for 10min. then broil for 2min. or so. watch closely. Cheese should be golden brown. I do mine in toaster oven.

    Open faced turkey sausage burger with ham, Swiss and Jalapeno. Also a carrot, mixed veggies, stir-fry and green beans. And I have a slice of low sugar lime pie defrosting as I type.

    My customers brought me a plate. Chicken salad, hot wings, ham and cheese sandwich quarters, meatballs and little smokey's. I saved the meatballs and little smokey's for my wife. {since I don't really care for them} Everything else was really good.

    Blackened salmon with sauted yellow and green summer squash, onion, orange bell pepper, & cherub tomatoes and a wild rice blend.

    My wife did the cooking tonight. I've had three late nights and early mornings back to back to back, and I napped in the love seat while she fixed supper. It was Broiled Swai, steamed broccoli, corn and tomato slices. I served my first fillet with pickled Jalapeno slices, and the second one with peach pineapple salsa, fresh tomato and Jalapeno. It was good both ways.

    I came up with a new squash recipe today at lunch. The way the garden is looking, it won't be the last one. Supper was Squashchamacallit, green beans, stir-fry, mixed veggies, pork loin, pizza and {not pictured} broccoli salad.

    Squashchamacallit:

    3 cups yellow squash
    1 cup onion
    1 cup carrot
    1 cup sliced almonds
    3/4 cup Jalapeno
    2 Tbs olive oil
    1/3 Tbs lemon pepper seasoning.

    I was in a hurry to get back out to the garden, so supper was fast and easy tonight. Chips and salsa, ham and Swiss, green beans and stir-fry. Margarita pie with orange slices for dessert.

    Pinto beans with turkey sausage, served over rice. I added stir-fry, corn and fresh tomato to mine. Also an Arby's turkey bacon wrap. Then later, some of the low sugar chocolate pudding.

    mmm everyone's dinners look/sound so yummy! tonight was Grilled chicken with greek spice, baked potato with cheese, onions, bacon bits and margarine, Cesar salad and tzaziki! All made to fit into my goals.

    Is Swai a really strong fishy taste or mild like Tilapia? I LOVE fish and don't mind stronger fish, but my husband hates fishy tasting fish and so far we just eat tilapia. Our store is ALWAYS out when I go shopping but I see swai fish there and am curious about the taste.

    Folks I made quinoa for the first time today. I have to share my recipe because it really has a fantastic taste and 286 calories per serving. This recipe serves 3 but could serve 4 as a side.

    1/2 C quinoa
    1/2 C of tri seasoning (celery, onion and peppers)
    1/2 C chopped mushrooms
    1/4 C of pine nuts
    1 TBS olive oil
    1 TBS butter
    1/4 tsp leaf thyme
    1 C of chicken broth
    Rinse and cook quinoa in the broth. Saute the veggies, nuts and seasoning in olive oil and add to cooked quinoa. Mix to blend all and add butter.

    It is a South East Asian catfish. Most of what you see in the stores are pond raised in Vietnam. I like it better than Tilapia. It is flakier and has a mild flavor, not fishy at all. Give it a try. It's only 98 calories per fillet.

    Oh yay! Thank you. It will be nice to have two choices of fish to pick one. Von's can't be out of both at the same time each time I shop. Well, they could be, but I'd have to find a new store if that happens.

    seasoned chicken tenderloins with zucchini, spinach, tomatoes, onions, garlic and browned it... over brown rice. it was delicious

    An ABLT (avocado bacon lettuce tomato) sandwich with strawberries - I love that the avocado substitutes for the mayo and/or cheese I would usually put on!
