    Summer Salad: baby spinach, mixed berries, red onion, goat cheese medallions (warmed or preferably rolled in pumpkin seeds and toasted), topped with a berry or balsamic vinaigrette. Sooooo good!

    In eggs or smoothies works for me... I do a quick smoothie with protein powder, baby spinach, frozen strawberries and flax seed. That works really well on the run.

    Cook it if it starts to look like its going to turn. A massive amount of raw spinach will cook to a tiny bit of cooked spinach. I add that to omelets or eat it plain with some olive oil and garlic.

    This! That's what I always do. It is great cooked as a side dish and shrivels up to nothing!

    Stir fry it with garlic and olive oil along with portobella mushrooms.
    Add it to tomato sauce for pasta or throw it on the pasta before pouring the sauce over it.
    Add it to lasagna.

    I do all these, but my favorite is to steam the spinach over my pasta water for the last 90 seconds before I drain the pasta, then stir the spinach in and top it with tomato sauce. Delicious, and it means I can have a huge plate of "pasta" without a huge caloric hit.

    Smoothies, sautéed, as a salad (I throw together whatever comes to my imagination. it's usually spinach, chicken, tomatoes, salt, pepper and lemon juice), in an omlette, a stir-fry. You can throw spinach into whatever you want really or serve them as a side. You can put them in any kind of cooking! :)

    If you're using it for smoothies you can just throw it in the freezer before it goes bad.

    Sautee or wilt and serve under whatever your main course is. Scramble with eggs. (Bon Appetit has a good recipe for a modified Eggs Florentine.) Just stuff it in your face. Spinach cooks down a *lot*, so if you cook a big bagful you end up with a manageable amount of food.

    I vote for the smoothies, I have one almost every morning with both spinach and kale added to different fruit and protein powder.

    Also, I put a paper towel inside the plastic container and it helps to absorb the moisture. Seems to last a bit longer.

    I like making spinach pesto. I use this recipe below and replace half the basil with baby spinach. You can do so much with. I like to put a little on grilled chicken or steak. I have also used it as a spread on sandwiches, on scrambled eggs and of course tossed with some penne pasta. Although, I am staying away from pasta for a while...It freezes pretty into ice cube trays for small servings.

    I have also chopped left over spinach in my food processor added a little water and frozen it that way too. It makes it easy to throw a couple cubes in to soups/sauces to give them a little extra nutrient boost.

    I second all the suggestions to saute. Wilt it down with a little butter and garlic. A whole bag becomes a tiny but very tasty serving.

    There's loads of ways- with eggs, in wraps/ sandwiches, in tomato dishes (eg bolognese), in cheese sauces (I know this isn't strictly healthy but you can make it alright), as layers instead of lasagna sheets, in smoothies. I'm sure there's much more that I use it for. I go through spinach at ridiculous rates.

    Take any lasagna soup recipe ( there are many at highly rated ones at Yummly.com) and dump it all in at the end with some fresh grated nutmeg. Freakin awesome!!!

    If you cook the package for any purpose (omelet, sautéed w/ anything, etc.) you'll be amazed by how much it cooks down. A huge bag can easily turn into about a cup or even less of cooked spinach.

    Wow so many ideas! I run into the same problem as OP that we throw it out sometimes. Never again!
