Homemade pizza with store-bought thin crust. Chorizo, turkey breast, kale, red bell peppers, onion, corn kernels and cheese. It was amazing!
Rib steak (trimmed and cut in half) basted with shikoji and miso butter, parsley and parmesan salad, sweet peppers and Vidalia onions roasted on the grill.
It was good!! BF was missing french fries though, but I have bought chips and beer for the hockey game, so I think that he will get over it.

Some of my recent meals:

Tofu Shirataki "Spaghetti" in a Tomato Cream Sauce
8 ounces tofu shirataki "spaghetti-style", dry-fried before adding the sauce
3/4 cup tomato sauce
1/4 cup low-fat cream cheese
1/4 cup water
1/2 cup diced tomatoes
Garlic, to taste
Onion, to taste
Salt and pepper, to taste
Oregano, to taste
1 tbsp grated parmesan cheese
Combine sauce ingredients and simmer, stirring frequently, while dry-frying your tofu shirataki noodles. Once the noodles are dry (all of the moisture is evaporated out of the skillet), pour in your simmered sauce and continue to saute with the noodles until the sauce is your desired thickness. The entire plate, shown above, is 325 calories.
Tofu shirataki is my new pasta staple. Only 40 calories per 8 ounce serving and much tastier (and better texture) than traditional shirataki.

Today is my first full day of eating maintenance calories, so I kicked it up for breakfast. Ham, turkey, squash, tomatoes, grapes, corn on the cob, eggs and toast. Not to bad.
