Mountain Stop burger after climbing Mt Pomona
peanut/chilli garlic chicken stirfry0 -
Zucchini Slice Recipe:
1 large zucchini (or 2 small ones) grated
1 medium carrot grated
3 short-cut bacon rashers (fat removed) partly cooked, diced
1/2 cup self raising flour
5 eggs
handful of grated cheese
frozen peas and corn (just eye ball the amount)
1. mix the flour into the carrot and zucchini in a bowl
2. add all the other ingredients and mix till combined
3. pour into a slice pan
4. bake in oven at 180 degrees Celsius for 40-50mins
5. its done when skewer or knife comes out clean when poked in the middle
6. best left chilled to harden a bit
roughly 184 calories per slice when cut into 6 slices.
You can add other vegies such as mushrooms, dried tomato etc and that would increase the calorie count.0 -

Not glamorous but DAMN tasty. One of my fall back meals. Always in my freezer I make 16 QTs at a time. 17 Bean soup with chicken sausage.0 -

Turkey patty melt on rye, havarti cheese.0 -
Vegan chili-lots of veggies I stewed with plenty of seasonings, cumin and chili powder. I added some fresh garlic as well. After I cooked down all the veggies, I added a can of black beans. I only used a bit of water to cook the veggies in, the fresh tomato produces enough juices that you don't need to add broth or sauce. Also I made a homemade pico de gallo and added a big spoonful for the onion and cilantra that it adds to the dish.0 -
