    A ham and turkey breast sandwich with pepper jack and cherry tomatoes. Corn on the cob, stir-fry and green beans. Then the last of the Key lime pudding. That means it's time to make more.

    Thank you. The trick is to take 10 or 15 pictures, then pick the best one.

    Mine was plain and simple for a quiet Saturday night--white rice with spicy tuna and Japanese pickled radish and cucumbers; also ate some leftover artichokes. Then mango and tea for dessert.

    I ate with two of my customers. A kid's birthday party was a hot dog, chips and dip. A family reunion was baked beans, a meatball sandwich, and some of my mixed veggies. I did eat a chicken wing in the kitchen. It was all very good.

    Might try this new pizza crust recipe I heard of. Greek yogurt and self rising flour recipe. Curious

    Let us know how it turns out.

    Larro

    Turned out pretty damn good. Here is the recipe:
    1 cup flour, 1 cup yogurt, 1/4 cup each cheese, 1/2 cup sauce. Might need slightly more flour to keep from sticking.
    Greek+Yogurt+Za.jpg

    Just some nutrition facts to compare:
    Picture vs. Pizza Hut
    Whole pizza 720 calories vs. 3 slices cheese 720 calories
    Fat = 12g vs. 30g
    Sodium = 2053mg vs. 1620mg
    Potassium = 465mg vs. 0mg
    Carbs = 103mg vs. 78mg
    Protein = 53mg vs. 30mg

    We had everyone over tonight for supper. {Mamma, Sister, BIL and grand niece} My wife done us proud with pork loin, rice and turkey, onion and Jalapeno gravy, summer salad, green beans and new potatoes, and Jalapeno poppers. It was all very, very good. Most everyone had a bowl of ice cream, but I had a Nutty Buddy for dessert.

    I fixed green beans, stir-fry and mixed veggies to go with the leftover pork loin and chicken cordon bleu. Then had some low sugar peach pie with frozen grapes. It was all pretty good.

    A new Turkey Sausage burger, corn on the cob {out of the garden} grilled squash and zucchini {also out of the garden} grilled sweet potato and Jalapeno poppers. Not pictured, summer salad. Later on I had Blue Bell ice cream with blue berries {out of my sister's garden} The new burgers turned out very good, as did everything else.

    Sure, it's really simple...

    Orange Carrot Cornmeal Cookies

    INGREDIENTS

    1/2 cup (1 stick) unsalted butter, room temperature
    1 cup confectioners' sugar
    1/2 teaspoon pure vanilla extract
    1 teaspoon packed finely grated orange zest
    1 teaspoon coarse salt
    1 cup all-purpose flour, (spooned and leveled) <----I substituted with almond flour to make it Gluten Free
    1/2 cup fine cornmeal
    1 medium carrot, grated on small holes of a box grater (about 1 cup)

    DIRECTIONS

    STEP 1
    Preheat oven to 325 degrees. In a large bowl, mix butter and sugar with a wooden spoon until pale and fluffy. Stir in vanilla, orange zest, and salt. Add (almond) flour and cornmeal and mix until mixture is crumbly. Add carrot and stir until a thick dough forms.
    STEP 2
    Drop dough by rounded tablespoons, 2 inches apart, onto two parchment-lined baking sheets. Bake until cookies are light golden brown at edges, 25 to 30 minutes, rotating sheets halfway through. Let cool completely on wire racks.

    Enjoy!
