Hope all of you had a good 4th. Our family gathered at the Larro Ranchero and we had peas, green beans, corn on the cob, turkey/turkey sausage meatloaf, a cucumber, squash and tomato salad in oil and vinegar, a spinach fruit salad with almost no spinach, my sister's Key lime pie, and my wife's new low sugar lemon mousse. It was all too good for my good.

Sorry no picture. We had grilled chicken breasts with McCormick maple seasoning?, grilled green beans, roasted red pepper humus ( store brought) ,homemade pita chips (wheat), homemade guacamole made with store brought mix, grilled corn on the cob no butter or salt, and a diet dr.thunder. For dessert I had a Russel Stover sugar free pecan delight ( only one was too full).0

I've never seen the bacon wrapped onion before. That looks good. Is it cooked in the oven? My garden is cranking out the onions, so that is something I will try.

They are cooked in the oven. Wrap em', skewer them, and put them in the oven @350 for about 30 minutes or until they are as done as you like your bacon - really pretty simple. We only make them a couple of times a year for bbq's and at Thanksgiving to go on top of a green bean casserole. As long as you don't lose all self control they are not a big hit to a diet since it's just one piece of bacon and a couple of rings of sweet onion.0 -

Thanks. I will give them a try. Since I'm making so many onions in the garden, I'm cooking with them more. We do the bacon wrapped green beans, and really love them.

I gave up on my customers feeding me supper, so I defrosted ribs, and cooked green beans, and stir-fry with mixed veggies. Just as I was getting it on a plate, my customers brought me a plate. It was mostly junk food, but I ate it anyway.

My wife makes sweet pickles, which I pass on because of the calories. I will look for a recipe that uses splenda, or one of the other sweeteners.0 -
We went to one of our fav fish restaurants and I had a grilled salmon sandwich on toasted walnut wheat sourdough with a side of Asian coleslaw and steamed Brocolli and yellow squash. No pic. Still haven't figured out how to post pics on this site.0

Last night was monterey chicken and sauteed brussel sprouts with bacon. Tonight will probably be sticky garlic chicken and... zucchini? I think I bought zucchini on Thursday... If not - it'll be peas I guess. I know I have baby peas.0

Tonight it was meatloaf, peas, corn on the cob, creamed corn, and a cucumber, tomato, pepper, onion and squash {in vinegar} salad. All the veggies are out of the garden. I also had a double shot of low sugar desserts. Peach pie and lemon mousse.

Two zuchini run through a vegetti, sauted with sweet onions, 4oz boneless skinless chicken breast, and one cup crimini mushrooms in olive oil, then simmered in garlic pasta sauce.0

Last night steamed salmon with quinoa, broccoli and spinach.
Tonight; wholeweat organic spaghetti with homemade tomato and vegetable sauce and maybe quorn mince, topped with fresh spinach from the garden.
Homemade Tomato Sauce recipe:
• 2 tablespoons olive oil
• 1 onion, diced
• 1 pint cherry tomatoes, sliced in half
• 1 cup water
• 1 clove garlic, thinly sliced
• 1 tablespoon dried oregano
• ½ teaspoon chilli powder
• ½ teaspoon celtic sea salt
(I also chop up some carrot, pepper, cabbage, spinach to add more veg/nutrients)
1. In a large skillet, heat olive oil
2. Add onion and sauté until soft, about 10 minutes
3. Add cherry tomatoes, water, garlic, oregano, chili and salt
4. Cover and cook for 10-15 minutes over medium heat until tomatoes are soft and beginning to fall apart
5. Serve0 -

We grilled turkey/turkey sausage burgers tonight, with corn, peas and a cucumber, Jalapeno, tomato and onion salad. We also added a Jalapeno to the burgers. They came out real good.
