    I came into work to set up for an event tomorrow night, so I took the wife out to supper. We ate at Parramore's Too here in Blountstown. I had the catfish fingers with a Caesar salad and fried okra, and she had shrimp, cheese grits and sweet potato. I did eat a quarter of her sweet potato too. I did not eat my hush puppies though. Everything was real good, but sadly, I forgot my camera. She offered to get her cell phone out of the car, but I told her not to bother. I had this same meal a while back, so I'll just re-post that picture.

    I had a chopped veggie salad with edame and feta for protein.
    For dressing I mix up several. Today's was lime juice, balsamic vinegar, Trader Joe's nonfat Balsamic and TJ Champagne Pear. I look for dressings where a serving, 2 TB, is under 40 calories. I like TJ's low-fat Cilantro dressing also.
    I used Trader Joe's 8 chopped veggies and added cabbage, peppers from the garden, cold sautéed broccoli, and whatever else was around and looked good. Chopped salads are easier for me to manage.
    I'll eat a half or so of baked potato as a snack. Salt and pepper, and maybe a little feta. I can eat potatoes with nothing on them, cause other food plans said they were a no-no.
    Yes, I had a beer.

    Spinach and cheese manicotti in homemade tomato sauce. I used lots of spinach and low fat ricotta and mozz cheese. Really good! About 200 cals per roll. I ate 2.

    Last night's supper was pepperoni pizza rolls and a glass of V8 VFusion Booberry Pomegranate Juice with a 32oz bottle of water.

    I had a bankers meeting in the building tonight. They had BBQ chicken, a salad, baked potato and cup cakes. I cooked the stir-fry myself. It was alright, but nothing to write home about. The one bright spot was the bread. They had four kinds to choose from, and none of them were yeast rolls. It is rare to see good bread at these kinds of events.

    The Taekwondo class is having a little party here at work tonight. They had hot dogs and chili. {also cake and ice cream, which I had a taste of} I also used some leftover chicken breast to make a stir-fry to go with my green beans.

    I went to Coyote's for supper. I had their version of Chicken Fettuccini Alfredo. I also had one glass of Bud Light and multiple glasses of water, to top that, plus lots of chips and salsa. No dessert(my mom spent all the dessert money on 3 margaritas).

    I sautéed some fresh spinach, mushrooms and halved Brussel sprouts in olive oil, added a little pizza sauce and a couple turkey meatballs, and served over spaghetti. Side of watermelon.

    More stuff from deep within my freezer. We cooked the corned beef brisket in the slow cooker. It is very tender. Also had green beans and potato salad. And tried a new bean soup. This one is 13+black bean. It turned out very good. I have to freeze a bunch of it, as there was 12 cups.

    13+black bean soup recipe:

    1/2 cup Bob's Red Mill 13 bean soup mix
    1/2 cup BRM Bountiful Black Bean soup mix
    1/2 cup BRM Pearl couscous
    11 oz ham
    14.5 oz diced tomatoes
    16 oz frozen stir-fry veggies
    1 1/2 cup frozen corn
    1 1/2 cup diced carrots
    1 3/4 cup diced onion
    1/4 cup diced New Mexico chili and Jalapeno peppers
    1/3 Tbs lemon pepper seasoning salt
    1/3 Tbs black pepper

    Makes 24 servings of 1/2 cup each. 95 calories per serving

    If anyone eats Bob's Red Mill products and has a Big Lots store in their town, BL has a lot of BRM products lately, and they are cheap compared to the local health food store or supermarket.
    I bought some yellow grits (polenta), some muesli, some quinoa, and some other things I'm going to try. Must look up recipe ideas online--what did we ever do before the internet??

    A cup of homemade lentil soup and 1/2 turkey bacon, lettuce and tomato sandwich on Alvarado Street no-salt sprouted grain bread. Cantaloupe for dessert.

    Today my mother in law made corned beef with cabbage, with very small white potatoes. I'm not a big corned beef person and I barely ate it but I gobbled up the cabbage.

    I always go by Big Lots before I do the rest of my grocery shopping. I have found crackers, cereal, granola and protein bars for as much as half off the price at other places. I take advantage of their Buzz Club rewards too. I have a $5 coupon sitting on my printer from there right now. I love the BRM products as well. The three main ingredients of my bean soup were BRM products.

    Lots of good sounding meals on here tonight.

    Late this afternoon my birthday party customers brought me a plate. I had ate so much at lunch from the family reunion customers that I brought the plate home for supper. It was grilled chicken, green beans with potatoes, potato salad and a slice of cake. It was all very good.

    What's the difference between supper and dinner?

    Tonight, I had a very simple home-y traditional Vietnamese meal with my parents: Rice, opo squash soup, fried whole fish with chili garlic fish sauce, and stuffed tofu. Childhood dinner. :)

    We had breakfast for dinner, over here.

    Scrambled eggs, waffles, sausage, fruit, yogurt. :)
