    sometimes i eat the trip tip with tomatoes instead of the peppers and onions.

    and i'll usually add a baked potato to that with seasoning. usually when we cook the idaho potatoes for an hour they are moist enough inside not to require butter, unless my macro's demand the fat.

    48 Pringles, 1 container of Frito- Lay bean dip, Diet Coke.

    Looking at your diary, it seems the only foods you eat are Pringles, bean dip, and diet coke… Just curious as to why you only eat 600-800 calories a day.

    Work dinner: fennel dusted sea scallops with saffron risotto and asparagus, 2 glasses pinot grigio. Didn't take pictures but wish I had, it was beautiful!

    Sausage/corned beef sandwich with onion, tomato, lettuce and Swiss. Also had mixed veggies, stir-fry and a couple of cucumbers. Then after supper went over to my sister's place and picked blueberries. I ate the ones that wouldn't fit in an empty yogurt container. 3/4 cup blueberries, 44 gr Blue Bell Ice cream, 50 gr Greek yogurt. Very good.

    Vietnamese Spring Rolls with barbeque chicken. Peanut dipping sauce. I asked for no shrimp, but they forgot! Had to pick them out. Can't stand shrimp.

    Someone was asking about homemade salsa recipes earlier today. I just found my wife's Pico de Gallo recipe. Here it is:

    3 large diced tomatoes
    1 diced onion
    1/4 bunch cilantro
    juice of half lime {or just lime or lemon juice}
    2/3 Tbs minced garlic
    2 or 3 Jalapeno, or the pepper of your choice

    Wash tomatoes and cilantro
    Dice tomatoes, onions, chop cilantro and peppers
    Combine in a bowl, add salt, garlic lime juice
    Mix and serve.

    For smoother salsa you can use a blender.

    Everything but the garlic and lime juice came out of the garden. I was putting it on everything.

    ^Hey that sounds pretty good!

    Will be eating my Hamburger Helper real soon(have to let it thicken a bit before I can put the topping on it and then stir it and then dig in). Yummy.

    Oh and I had a glass of fat free skim moo juice too just now. Now I'm at half a gallon of milk left.

    - Fried porkchops (with almond flour and EVOO)
    - Stuffed zuchhini boats
    - Corn

    The zoodles look awesome! I am not doing low carb so regular pasta doesn't bother me, but I appreciate the pics so I could see what everyone is always talking about!

    That said, I do have a recipe that uses julienne zucchini/squash mixed with linguini, with pine nuts, goat cheese, and a lemon butter sauce. I serve it with sauteed chicken. This tool would make it a lot easier than the y shaped peeler I use today.

    No low carbing here either, just trying to limit refined sugars and carbs a bit otherwise i'd have pasta 5 nights a week lol, and this was delicious and bloat and guilt free since it was all about my yummy sauce haha! for the first time i was contemplating mixing it with a half serving of pasta, but it wasn't needed totally yum! i still love me my reg pasta, had a splurge dinner out monday with pasta and bread and dessert all good ! lol

    You gave me an idea. Maybe I could eat just a serving (2 ozs!!!) of pasta if I mixed it up with some zucchini noodles and then added sauce.

    I couldn't really find anything at work I wanted to eat, so I waited until I came home and had a turkey sausage and Mexican cheese omelet. Also Greek yogurt and blueberries. Then later I had a bowl of ice cream.

    Lettuce wrapped homemade Black Bean Burger with avocado, red onions, cilantro served with jicama "fries". So filling and delicious!
