    Almond milk will work just fine, and would make this dairy-free for those who are lactose intolerant. Plus, it would likely add a nice touch of flavor. I just may try this myself!! :)

    I, personally, think you would still need stevia. Since vanilla almond milk isn't very sweet (IMO), it likely wouldn't contribute much of a sweet flavor to the recipe.

    I tried it on a whim. It was different. I don't think the consistency of the frittata is the same as normal ones w/o pumpkin.
