Thank you for posting this recipe! I made it for a bunch of my friends this weekend (in cake form rather than cupcake form) and they LOVED it. I didn't tell them that it wasn't horribly unhealthy.

One of them dubbed it "The Cake Full of Happiness and Light". Haha. =D
  • Do they really taste like pineapples?
Im not a fan of pinapples but like angel food cake

This recipe has been on here before but I thought I'd repost it for those of you who are new or didn't see it :) Took them to a "Girls Night" party and nobody knew the were "healthy"-they were a huge hit!

    Pineapple Angel Food Cupcakes

1 box Duncan Hines Angel Food cake (add water only kind)
1 20 oz. can crushed pineapple in its own juice.

Mix dry cake mix and pineapple together (no water). Fill cupcakes 2/3 full. Place batter in fridge between batches and it bakes better. Bake at 350 degrees for about 25 min or golden brown.

Delish and only 69 calories each, fat free! I put the nutritional content in the food data base under "generic pineapple angel food cupcakes". Enjoy!

I want to try this...add a few tsp of benefiber to the mix and use blueberries instead of pineapple. This just might replace the blueberry muffins I love so much!

Actually, you can omit the water and just use can of pinepple in its own juices. Then I layer with fat free or light cool whip and keep in refrigerator. Very Yummy!!!. I also have a recipe for what I call "Pumpkin Fluff Cake". If you like pumpkin pie then this is the recipe for you!

    Pumpkin Fluff Cake
    Cake:
1 box of Duncan Hines angel food cake (follow box directions)
to batter I add pumpkin spice and cinnamon (to taste)
    let cake cool

    Fluff:
    1 can of pumpkin
1 box fat free/sugar free vanilla puddin mix
1 container of fat free or light cool whip
    pumpkin spice and cinnamon
    Mix fluff together
I let stand in refrigerator (covered) for at lest 2 hrs)
    Ice cake with the fluff--DELICIOUS!!!

You can also just make the fluff and eat as a pudding!! Very yummy as well--ENJOY!!

Sounds yummy...I have some cake mix at home and I probably try this tonight. Hopefully this cake mix only needs water.

    Another variation on this is:

1 box of cake mix (any brand, any flavor)
    1 can of diet pop

I look at the box and find the one with the lowest calories.

Mix well with beaters and bake as directed. That is it, so easy and SO moist! I used a white cake Duncan Hines mix and a can of diet mango pop and it was delish!

    This made 24 cupcakes or a 9x13.
  • So excited to eat these!
  • Yum! Thank you! I love all the possibilities and variations, too! Can't wait to try!
