  • Laughing cow scrabbled eggs

    1 egg
    1 laughing cow
    sprikle of pepper
    some elbow grease with the fork and 20 secs in the microwave. Lovely creamy scrambled eggs without butter or oils or all that jazz!

    indulgent egg salad sandwich:

    one boiled egg, plus the white from a second boiled egg (97 cals)
    two wedges LCC blue flavor (70)
    one sandwich thin. (100)
    total (267)

    use one wedge to spread on the sandwich thin like a condiment, use the other wedge to mash up with the boiled eggs and make a creamy blue-cheese flavored egg salad. If you don't care for blue, you could do this recipe with the swiss, it's exactly the same, but I love the light blue cheese flavor with the boiled eggs, it reminds me of cobb salad flavors.

    My go-to lunchtime fave!

    So simple and so good!

    Bumping to keep this - love laughing cow.
    But we don't have the different flavours in the UK - only the normal and light versions, unless I'm mistaken?!

    All my gym buddies MAKE Laughing Cow cheese-the plant is in my town..so I have a whole fridge full of it! Are you jealous! :) lol I put one of the light cheese wedges on a rice cake. Its delicious and less than 100 calories.

    Oh wow! Yes I am jealous. We can't even get all the great flavours in Canada :(

    I use the garlic and herb flavor to mix in with my tuna fish along with a tbs of light mayo. It helps make the tuna creamy without more mayo and adds a nice flavor. Then I usually spread the tuna on a sandwich thin or wrap and add pickles, lettuce, and peppers.

    Just made this Mexican one last night and loved it! Hope you enjoy!

    Hungry for Mexican, but it's not doing anything for your waste line? Try these, I made them last night and they were amazing and ready in about 20 minutes! Plus had TONS of fiber and protein!

    Ingredients:
    1/4 Yellow Onion Chopped
    1 large red bell pepper chopped
    3 cloves of garlic chopped
    1 small package of Port Side Salad shrimp. (you can use other shrimp if you want... 1 1/4 cup frozen uncooked)
    2 wedges laughing cow queso fresco cheese
    2 tsp packaged taco seasoning
    1/4 tsp red pepper flakes
    black pepper, adobo and creole seasoning to taste
    2 homestyle 100 calorie whole grain tortillas

    Directions
    1. Chop the veggies... I tend to chop the onions first and start cooking them first since I like them the most done, but you could put them all in together if you wanted.

    2. Spray a skillet with cooking spray so the veggies won't stick, and cook on medium until they are soft cook the frozen shrimp in the pan with the veggies until cooked through out .
    - If your veggies and shrimp don't sweat out a lot of water, then add 1/4 to 1/2 cup of water to make spices coat easier, etc.

    3. stir in your spices to taste and your laughing cow cheese until melted through out.

    4. Put half in each Tortilla and Enjoy!

    I was just asking this the other day to some people! Your recipe sounds delicious and now I want to try it out!

    hungrygirl.com gives some great recipes using laughing cow.

    What about easy chicken cordon bleu?? Spread the laughing cow on a thin boneless/skinless chicken breast. Lay a slice or two of deli ham, roll it up and secure it with a toothpick and then bake :)

    I tried making a creamed spinach with it the other nite, but I haven't perfected that yet... I'll let you know when I do :)

    I make creamed spinach with the laughing cow light creamy swiss all the time!

    Ingredients:
    2 10 oz pkgs of frozen spinach (or use fresh!)
    1 large yellow onion
    2-3 wedges of laughing cow light creamy swiss (I use 1 wedge per person eating usually and depends on my mood and how many calories I have to use!)
    2 T parmesan
    salt and pepper to taste

    dice onion, saute until translucent. add spinach, mix. Add cheese, stirring until melted and warmed all the way through. (I add laughing cow first, melt it then add parm). Sometimes I'll add 2 tablespoons of hormel 33% less fat bacon bits!!

    I am obsessed with this dish!! I hope someone tries it and loves it :)

    Alfredo Sauce

    12 Wedges Laughing Cow Light Cheese
    2 Cups Skim Milk
    2 Tablespoons Butter
    1/4 Cup Kraft Reduced Fat Parmesan Style Grated Topping
    1/4 teaspoon Garlic Powder

    In a medium saucepan, combine all of the ingredients and cook over medium low heat until the cheese is melted and the sauce is smooth. Serve immediately.

    Serves: 9 (1/3 cup each)

    Hearty Creamy Potato Soup

    Just made this tonight and it was AMAZING! Really filling, and feels soo guilty but its not :)

    Ingredients:
    2tbs light butter
    2 tbs all purpose flour
    2 cups chopped celery
    1 large chopped yellow onion
    6 cloves garlic chopped
    6 cups fat free 33% less sodium swanson chicken broth
    2 cups 2 % milk
    4 large russet potatoes chopped
    4 wedges laughing cow swiss cheese
    1 1/3 cup shredded cheddar cheese
    4 tbsp hormel real bacon bacon bits
    Black pepper, Mrs. Dash, dried chives and rosemary to taste

    Directions:

    1. Melt the butter in a large, sautee the celery, onions, and garlic
    2. stir in the flour to thicken
    3. add the chicken broth, milk, potatoes and spices, still well boil until the potatoes are soft
    4. semi- mash the potates in the pot with a wish, but still leave in large chunks, this also thickens the soup.
    5. break up and stir in laughing cow cheese... this has a sour cream effect and makes it really yummy
    6. top each bowl with 1/3 cup shredded cheddar cheese and bacon pieces.

    this makes a BIG bowl and is really filling and yummy! 417 calorie for all of it... but you can save a bunch of calories by skipping on the cheese and bacon bits... it makes it taste soooo yummy! Enjoy!
