I had an amazing salad I threw together
2cups Spinach
1 Tomato sliced
2 Mushrooms sliced
Frozen Veggies (Carrots, peas and green beans)
1 cup Lean Hamburger
Sprinkled on Pine nuts (1/4 of 1/4 of a cup, not a lot! Just for taste!)
2teaspons Salsa
Serving Size: 2
It was pretty good, I'll admit! Now I'm full, and still have a whole other bowl ready for dinner or tomorrows lunch

I was out delivering all day in the van for work and it was hot so didn't fancy taking food that would go soggy . So I stopped at our local Co-op and brought a Chicken & bacon Pasta Salads (285 kcals) and a classic fruit salad (70kcals). Both really tasty and healthy.0

My schedule was thrown off, so when I finally got to eat lunch I was starving! Went the quick and easy route today: Lean Cuisine Chicken Margherita plus a chicken breast.
Always good to have a few frozen 'go to' things for days when the schedule goes out the window.0 -

I had Smart Ones Santa Fe Beans and Rice
a veggie medley of broccoli, tomatoes, and carrots
a couple of Miss Vickies Jalepeno chips - for the heat

1) Salad with Romaine Lettuce, mushrooms, cucumbers, black olives, lite ranch (a tbsp) - I usually like my salads with no dressings. I think the veggies are flavorful enough (I may be in the minority. hehe). Made an exception today though.
2) 1/2 cup cantelope
3) 4oz. cubed chicken0 -
Homemade lite chicken salad on flatbread crisps.

Made myself the best meal for lunch ---
3 oz Great Value Chunk Chicken breast
3/4 cup broccoli cuts
3/4 cup steam fresh whole grain brown rice
1 tsp Mrs. Dash spicy seasoning
1 tsp pepper
mix in bowl, microwave for 2 minutes [broccoli cook first of course or microwave first at least 3 minutes]
I used the 1/4 cup of steam fresh whole grain brown rice with some sprays of "I Can't Believe It's Not Butter," and, sprinkle of nutmet, sprinkle of cinnamon and a tsp of Truvia artifical sweetner ---yum yum [microwave 30 seconds for warm yummy taste]
It tasted amazing, and tasted like I was eating food that was bad for me
and I am full and happy!!!!!! :drinker:0
