Fruit Salad with a Home Made Lemon and Honey Vinaigrette and it lasted for days...I do watch my Calories but I am also eating for all the wonderful Vitamins and Antioxidants and just overall Health that food can bring to me that I was missing with the traditional Calorie Dense Nutrition Poor food I ate before. Loving my new lifestyle.

Went out for a work appreciation dinner! Had the grilled beef tenderloin with blue cheese
cream, red wine-chocolate sauce and bacon-wrapped mashed potatoes! Delish.
On a huge pizza kick lately. Making them on tortilla wraps mostly, and sometimes on GF pizza crust when I have more calories for the day! So yummy.
Chicken alfredo with GF rice noodies.
Went to an all-inclusive wine, spirits and beer event! They had a fun less pretentious wine pairing there that paired wine with junk foods! So fun and good!

Dinner - Homemade blacked-peas (cooked with crushed tomatoes, chicken stock, onions, garlic, carrots, salt and pepper) reheated with chopped turkey, raisins, cashews and parmasean cheese. Sides of raw asparagus, red bell pepper and cucumber.

I LOVE KOREAN FOOD!! Im actually going to make Bulgogi tomorrow and if we have nappa(We only rarely do since I live in the country), Im going to make a small batch of homemade kimchi. I wish we could get access to soju here. I rarely drink alcahol but everytime I have korean I just want to have a shot of soju with it! XD.

I attempted bean and cheese enchilada from scratch--with leftover ingredients. My first ever original recipe and I love it!! Though it does kinda look like lasagna though.

Dinner - Had a roasted turkey sandwich on Alvarado St. sprouted grain no-salt bread with onion, tomato, mushroom, spinach, cheddar, and guacamole. Sides of cucumber and grapes.

Lunch - Black eyed peas with turkey, raisins and cashews, a piece of this garlic bread.
Unplanned treat - Apple coffee cake
Dinner - Roast beef sandwich with romaine, red onion, tomato, fresh mozzarella, basil, and mustard. Sides of red grapes and cucumber.

I typically eat around 1800 calories per day (400-500 calories per meal + 300-600 in snacks), so I'm definitely not starving. I often don't post pics of all meals/snacks eaten during the day.0
