Steak and Eggbeaters:
Lean beef steak, pan seared with worcestershire sauce and topped with ketchup (out of steak sauce), with 6 tablespoons scrambled Eggbeaters with matchstick carrots, salsa, and ketchup.
Earlier today (lunch):
A whole box of frozen spinach with 3 tablespoons Eggbeaters and 1/8th cup of no fat cottage cheese.
A couple of days back, I made a homemade chicken pot pie:
With a from scratch whole grain herbed crust. Filled with peas, carrots, sweet potato, red bell pepper, pearl onions, garlic, and brown gravy mix/chicken ramen seasoning pack/red wine/I Can't Believe It's Not Butter sauce. Crust was probably the worst part (clean diet-wise), since it requires 1/3 cup of crisco to make a passably decent pie crust.

Sorry I misread your questions the corn is actually stove top stuffing with a half a cup of frozen corn mixed in. I dont like stuffing unless it has corn in it. weird i know.

Made these for a 6 year old's bday party, I had about 3 with a honey mustard dip I made. So good.

Breakfast. Mushroom Omelette, salsa and baked beans with vegetable juice

Tonight's Southwest Chicken Chile Soup. Eight servings, less than 300 calories each, my husband's favorite.
Chicken tenders, 16 oz (raw)
Can of drained black beans
Can of Chipotle corn
Large box of Swanson low-sodium chicken broth (or homemade)
1 C. diced onion
1 C. chopped celery
Can of diced green chiles
2 med. cans diced tomatoes (about 3 C.)
2 C. cooked rice
1/2 C. chopped fresh cilantro
1 tsp cumin powder
1/2 tsp celery salt
1 tsp black pepper
Throw it all in a Ditch oven or soup pot, bring to boil, simmer until done.
