I like my PB&J. I use Sara Lee 45 cal multi grain bread, 1 tbs of peanut butter, and 1 tbs of sugar free raspberry jelly. It is fast, taste good and holds me over for awhile.

I am not a morning eater, so I generally have my coffee (iced) and 1/2 lf graham cracker with 1 tsp whipped peanut butter -- less than 60 calories. I then toss a bag of apple slices in my bag in case I get hungry later; if not it can be an afternoon snack or part of my lunch.

    Huevos Rancheros
In a medium skillet coated with nonstick cooking spray, cook 2 eggs sunny-side up. Mix 1/2 cup black beans and 1/4 cup salsa. Top bean-and-salsa mixture and eggs with 2 tablespoons shredded reduced-fat cheddar.

    Tropical Fruit Parfait
Peel and cut 1/2 pink grapefruit and 1/2 navel orange into segments. Combine with 1/2 kiwi, peeled and chopped, and 1/4 cup pineapple chunks. Place 1/2 cup nonfat Greek yogurt in a bowl. Spoon half the fruit mixture over yogurt, add 2 tablespoons high-fiber cereal. Add another 1/2 cup nonfat Greek yogurt, remaining fruit, and another 2 tablespoons high-fiber cereal. Top with 2 tablespoons shredded coconut.

    Spinach and Parmesan Omelet
In a medium skillet coated with nonstick cooking spray, saute 1 cup chopped spinach and 1 tablespoon chopped scallion for 1 minute. Beat 2 eggs with a dash Tabasco; add to skillet. Cook until egg is cooked through, about 2 minutes. Flip and add 2 teaspoons grated Parmesan; cook 15 to 30 seconds. Serve with 1 slice toasted oat bread and 1/2 cup grapes.

I've been eating this most mornings and its so yummy. I make four or so jars at a time and just grab one and take it to work if I'm running late.

I subbed leftover cooked brown rice for half of the oats and it was really good that way. I also prefer rolled oats to steel-cut. Oh - and I don't do jam. I just thrown in fresh fruit and maple syrup or stevia.

I usually have 1/4 cup rolled oats , 1/2 cup unsweetened almond milk , 1 tsp cinnamon , 1 tbsp dry cranberries and 1 tsp equal microwave for 2 mins . Long with a hard boiled egg . :)
