    how about buffalo chicken wrap with blue cheese?

    1 light wrap (around 100 cal0
    1 morningstar farms ChikN Patty
    2 Tbls Franks Red Hot Cayenne Pepper Sauce
    1 Wedge laughing Cow Blue Cheese
    Shredded Lettuce
    Onion

    Spread blue cheese over wrap and top with sliced onion. Microwave ChikN Patty for 1 minute and coat with hot sauce. cut in half and place on wrap and top with shredded lettuce. Wrap it up and cut in half. Enjoy!

    This recipe has 275 calories for the whhole serving and it is delicious. I have a weak spot for buffalo chicken with blue cheese dressing so this really kicks its butt. I Hope you like it!

    I Do wish i could find the chipotle flavor but so far just Swiss, Garlic and Herb, Blue Cheese, French onion, and Sun Dried Tomatoe and Basil. But these are all great.

    I loved you all's buffalo - LCC Ideas! so mixed some Buffalo sauce with my queso fresco and put on top of my veggie burger for lunch, it was delish!

    I love to eat it on Wasa crackers (I get light rye) with a slice or two of deli turkey. Sooo good!

    I have seen some good recipes on the Hungry Girl website and even made one recently. I made a veggie lasagna with the no bake lasagna noodles. I sauteed fresh spinach, zucchini (cut lengthwise like the lasagna noodles), tomatoes, mushrooms, and roasted bell pepper (from a jar), and garlic heated just enough to wilt and heat the veggies a little bit. For the cheese layers I used 1/2 cup of light cottage cheese and I melted a couple (2-3) Laughing Cow cheese wedges in the microwave. You get BIG squares of lasagna for around 300 calories and the Laughing Cow cheese adds a ton of flavor. I did not add tomato sauce. The warm whole tomato pieces were enough. Uh oh...now I'm hungry :)

    This is a recent favorite of mine. To replace bufflo wings with blue cheese dressing....here's my healthy version.

    1-4oz grilled chicken breast ( I just use my george forman grill)
    Spread 1 wedge of LCC light blue cheese on top then drizzle with 1 tsp of franks original hot sauce.

    Soooooo yummy!

    OMG This sounds so goood! I love Frank's Hot Sauce. I make hot wings just so I can use the sauce. LOL! Gonna have to try this out.

    I do this all the time as well, minus the turkey. It's a great evening snack for keeping my morning blood sugars down.

    Trivial, but good. My snack last night:

    Quesadilla Snack = 180 cals

    2 wedges Laughing Cow Queso Chipotle (70 cals)
    2 soft corn tortillas (90 cals)
    2 TBSP good salsa (maybe 20 cals)

    Open and spread the cheese on one tortilla. Sandwich the other tortilla on top. Microwave 30-60 secs until hot and melty. Cut into 8 wedges. Eat with salsa.

    that sounds so yummy!

    I sometimes crave buffalo-chicken pizza and bleu cheese, so I came up with this concotion:

    1-2 wedes Laughing Cow Light Blue Cheese
    1 whole wheat pita, sprayed lightly with cooking spray
    3 oz chicken breast, boiled, marinated in 1 Tbls I Can't Believe It's Not Butter and enough hot sauce to coat the chicken
    Red onion, chopped

    Spread the pita with cheese, top with chicken and red onion. I believe I cook at it at 350 until the pita is crispy, but I can't recall for sure.

    A bit high in sodium, but it sure helps curb my cravings!

    I love it on Wasa Rye too but with some red pepper jelly on top for a little treat :)

    Laughing Cow is great but it's still a manufactured food product - meaning that it's filled with lots of weird ingredients that I'm not so sure I want to be putting in my body (at least not in large quantities). Anyhow, I LOVED Laughing Cow but cut out all processed foods. What's a girl to do? Make your own!

    Okay, I promise it's not that hard, in fact it's super easy (two ingredients). See below:

    Step 1: Mix 16 ounces of plain Non-Fat Greek Yogurt with 1/2 tsp salt (or less, if desired). IMPORTANT: Make sure your yogurt doesn't include gelatin or stabilizers - the ingredients should just be milk and active cultures. Chobani brand works extraordinarily well.
    Step 2: Drop mixture into a cheesecloth. Collect the corners of the cheesecloth and hang over a bowl in the fridge so that they whey (watery mixture) can drip out
    Step 3: Allow to sit for 24 hours, or until desired dryness is achieved. It will yield approximately 11 ounces. (And only has 25.5 calories per ounce!)
    Step 4: Enjoy!

    This "cheese" (actually called labneh, with origins in the Middle East) has the slight tang of the yogurt, and the texture of goat cheese (SOO much better than those processed wedges!). Personalize to your tastes by adding herbs and spices. Tonight I added dill and a pinch chile verde sea salt and spread it on tomatoes, it works well as a dip for veggies, spread for sandwiches and it also melts beautifully.

    I am now inspired to be more creative with laughing cow. One thing I do enjoy is speading the bleu cheese variety on either a bagel thin or sandwhich thin with turkey bacon. Makes a nice little snack for only 195 calories.
